    A SIMPLE YOGURT PARFAIT.  I mean..making this literally takes minutes, but it is so dang good.  Not only is it super healthy for you (as long as you are not using sugar loaded yogurt), but it looks pretty too. 🍓
This yogurt parfait actually has a story too.  I took this picture while I was at a Food Photography Masterclass in Denmark.  To say that this class has really helped me with my food photography would be an understatement.  It helped me in more ways than I could ever explain. 🍓
Although this picture was taken while the Master herself was there @siforellana - but we were being taught the difference between “light and airy” and “dark and moody”. This one is obviously the latter. 🍓
I hope to someday be able to photograph like this 100% on my own…but until then…I will fondly remember this class, the teacher and all of my fellow students.

    Have you ever opened up a bag of granola and suddenly... whoops realized you ate the entire thing without even thinking about it? 😱 Mindless, emotional and comfort eating led me to being 250 pounds!! I always thought I knew how to eat, but in actuality I was not in touch with my reality. You can make a change if you want it. It won’t be easy... people will laugh, it will take dedication, planning, grit, grind... and willpower. Oh... so much willpower!!! So how did I change?! A simple color coded container system that allowed me take the guesswork out of figuring out what to eat! No counting or weighing food... just simple ingredients, and real food to fuel my body. No gimmick... no trick... just re-learning what I needed to eat to lose weight and now maintain what I lost. I no longer suffer from emotional or mindless eating... but there are days I still feel it creep it! The difference is now I know how to recognize it and put a stop it before it snowballs out of control. Consistency... time, patience... dedication. This journey has made me develop some thick skin... and some fierce  willpower. I wouldn’t change it for anything.

-Mezclas con proteína en polvo (Yo usé N MAX sabor Vainilla de @se70tre30) 💡Tú puedes usar cualquier otra u obviar este paso y agregar stevia para darle sabor dulce y usar menos agua. -Sirves en un recipiente de vidrio, o un vaso de vidrio o descartable. .
CAPA 2️⃣
-Mezclas yogurt (Yo usé sabor Durazno) con 3 cditas de chia
-Dejas reposar por 10 minutos en la refri
-Sirves la segunda capa y metes a la referí nuevamente

-Licuas un plátano pequeño congelado con ¼ taza de leche (debe quedar espeso)
-Sirves la tercera capa

    Breakfast on vacation is one of my favorite things, who else out there is a breakfast lover? 🤷🏼‍♀️ Woke up early and did some fasted cardio and an upper body workout this morning then had this yogurt parfait power bowl and turkey bacon (had to get in some xtraaaa protein). Now off to enjoy the rest of the day in beautiful Kauai 🌴🌞

    Happy Sunday!
2 exams down, and just ONE standing between me and being officially complete my undergrad. 
My last one is on Wednesday, and after that, Ellyssa will be unreachable for at least 2 days... maybe longer... depends if she hears her alarm clock 48 hours after the exam because she will be hibernating LOL. 
Words cant describe my excitement. My excitement to relax. Christmas time is about as close as i get to being stres free because its after exams and a time when I actually had NO WORK. 
Summer? I took summer courses. Yes by choice, but it was only to be done on time! Spread the load, and also declare a minor half way through my degree. My program originally didnt allow you to declare one at all, but they changed that when I was in second year so I had to change my entire course load to try and fit it all in while graduating on time! Yes again, a choice, I didn't have to declare a minor, but why the heck not? 
Anyway, I literally had school for about 4 years straight, and I'm just looking forward to having some time to catch up on life, AND FREAKING START ONE.
Damn... adulting is coming. Am I ready? I was born ready 😂 #kidding #secretlyterrified
