Sweet potato falafel
230g chickpeas, canned or cooked
200g steamed or cooked sweet potato
1 yellow onion, roughly chopped
3 garlic cloves
handful of fresh herbs of choice (parsley, coriander, or mix of both)
2 tbsp of tahini
1 tsp ground cumin
1/2 tsp ground coriander
1/2 tsp salt, or more to taste
1 tbsp sesame seeds (optional)
Preheat oven to 210C. Place all the ingredients (except sesame seeds) in a food processor and pulse blend until combined, but still chunky. With your hands (wet them slightly if the dough is sticking to your fingers), form about 16 balls, lightly press them on a baking tray lined with parchment paper and sprinkle sesame seeds on top (optional). Bake for 20 minutes or until golden brown and crispy on outside.

    GAINING WEIGHT IS COOL...{swipe} LOSING WEIGHT IS COOL TOO ✌🏻
That first picture of me wearing this peach maxi in 2016 popped up in my time hop this week and honestly I was shocked at what I saw. Sometimes it still even amazes ME the transformation my body went through going from 246 pounds to under 140 at my lightest. What also amazes me though? How happy I am to no longer be EITHER of those girls!!! Yes: I do think losing weight is cool when your health and quality of life is at stake. Yes: I also think GAINING WEIGHT is cool when your MENTAL health and quality of life is at stake. See what I did there 😉 
I’m so appreciative for both of these stages in life and what they taught me. I’m grateful that in 2013 I knew what it felt like to get to my heaviest weight of 246 pounds and how it felt to be that weight: uncomfortable, insecure, and with the beginnings of multiple health problems. I’m also appreciative for the girl I became in 2016 at her lightest weight who learned what I had to do to maintain that: obsessively track my calories and exercise every single day and mentally stress over every single social situation that involved food or alcohol. 
I’m appreciate for both of these stages in my life, but also ultimately so happy to be right 👏🏻 here 👏🏻right👏🏻now👏🏻 as this girl 😊❤️ So yes: losing weight is cool, gaining weight is cool, and living your best life maintaining wherever you end up in between the two is really freaking cool too 🙌🏻
Since I know you will ask: I’m 5’6 and currently maintaining at 175 pounds. 
Also please meet my friend @caroline.outen. It was too hard to crop your head out 🤣 Thanks for being my friend in all of these stages even though your head is only in one 🤣🤣🤣

    So many of you have asked about kickboxing and whether or not I still do it. Here’s the truth: I’m really bad at being committed to exercise. If you give me a choice between working and exercising, I’m working every time. Sure, I could make time. But I’d rather focus on building my brand, analyzing our student progress data obsessively, checking to make sure every dollar is going to the right place, and being available for my parents and tutors at all times. I suck at work-life balance. But my company is booming! 😩🤦🏾‍♀️ Can you relate? #TellTheTruthWednesday
