    Pensando ya en hacer esfas deliciosas bolitas de avena y frutos secos para darle la bienvenida a mi Mommy; sus favoritas 💕💕💕. Para hacer necesitas:
*2 tazas de harina de avena
*100 gr de dátiles (a gusto)
*Agua tibia *Frutos secos (use cranberries, nueces y almendras picadas)
*Cacao o coco para bañar

Poner dátiles en agua tibia por unos minutos y luego procesar para hacer un manjar con un poco de agua. Mezclar con avena y agregar agua si es necesario. Agregar frutos secos y hacer bolitas. Bañar  a gusto 😊🤸🏼‍♀️😋. Fotografía

    I have made a commitment to myself to get back on track with fitness and giving my body the very best!! With the help of a dear friend/trainer here I go!  First meal of day (well after breakfast lol) pictured fresh greens (spinach, arugula, fresh herbs tossed in a squeeze of fresh lemon juice and sea salt) with grilled tofu as. Pea shoots. I devoured this deliciousness.

    Vegan Chili Cheese Fries by @elavegan 🤤 Tag someone you'd share this with!

Ingredients
Fries
5-6 potatoes (Yukon Gold or Russet)
1 tbsp coconut sugar or regular sugar
cooking spray
1 tsp onion powder
1/2 tsp paprika
1/2 tsp garlic powder
sea salt & pepper to taste
Chili
1 medium/big onion, chopped
4 cloves garlic, finely minced
1 green pepper, chopped
1 small/medium carrot, grated
5-6 medium diced fresh tomatoes (560 g) or use canned (20 oz)
6 tbsp tomato paste
2c water or vegetable broth
4c cooked or canned beans (e.g. kidney beans, black beans, pinto beans, white beans, or 1 cup of each)
2 tsp coconut sugar or sub brown sugar or any other sweetener like maple syrup
spices: 1 tsp ground cumin, 1 tsp onion powder, 1 tsp garlic powder, 3/4 tsp salt or less if you use vegetable broth, 1/2 tsp black pepper, 1/4 tsp smoked paprika, 1/4 tsp hot chili powder
1-2 hot red chili peppers (I used 1, my boyfriend prefers 2)
2 tsp oil or water for frying
Vegan Cheese
Homemade vegan cheese sauce or store-bought vegan cheese of choice
Instructions
Peel the potatoes and cut them into about 1/2 inch-wide sticks.
Place potato sticks in a bowl, sprinkle sugar over them. Set aside until liquid is released from the potatoes (20-25 min).
After 15 minutes, preheat oven to 425F/220C and line 1 large baking sheet with parchment paper. Spray with cooking spray.
Drain liquid from potatoes and dry them well with kitchen paper.
Coat fries with the seasonings. You can also use cooking spray on them to make them even crispier but they also turn out crispy without oil.
Spread the fries into a single layer on the baking sheet and bake for about 30-40 min or until golden brown and crispy. Flip halfway through.
Meanwhile, start making the chili. In a large pan or pot over medium heat, add in the oil. Sauté the onion and pepper for about 3-4 minutes, add the garlic and sauté for an additional 1-2 minutes, stirring occasionally.
Mix in the tomatoes and sauté for another 2-3 minutes.
Now add all remaining ingredients, increase the heat and simmer for about 30-40 until thickened, stirring occasionally.

Recipe:

1/2 cup uncooked rice (100g)
Fried red onions
Mushrooms
Chickpeas
Peas
Avocado
2 tbsp coconut oil
4 cloves of garlic, minced
1 handful fresh parsley, finely chopped
1/8 tsp cayenne pepper
2 tbsp tamari or soy sauce
Sesame seeds for garnish (optional) 
Instructions:
1. Cook the rice according to package directions.
2. Place some water in a wok or frying pan and bring it to a boil. Then add the veggies (they must be covered by the water) and cook for 1 to 2 minutes over high-heat. Drain the veggies and set aside.
3. Heat the oil in the wok and add the garlic, cayenne powder and parsley. Cook over high-heat for over 1 minute, stirring occasionally.
4. Add the vegetables, rice and tamari. Cook for about 1 to 2 minutes more.
5. Add some sesame seeds for garnish (optional).
Store the rice stir fry in a sealed container in the fridge for up to 5 days. Enjoy!

Stuffed and baked potatoes are such a popular dinner option, and why wouldn't they be - they're simple, delicious, and perfect for adding your own distinct touch!

Recipe
Ingredients:⠀
4 medium sweet potatoes⠀
1-15 ounce can chickpeas⠀
1 tablespoon olive oil⠀
1 teaspoon kosher salt⠀
1/2 teaspoon black pepper plus more for serving⠀
1/2 teaspoon cumin⠀
1 cup baby spinach, roughly chopped⠀
2 tablespoons tahini⠀
Flaky sea salt for serving⠀
Crushed red pepper flakes for serving⠀
⠀
How To Make:
Preheat the oven to 375 degrees F. Prick the sweet potatoes with a fork and roast for 45-55 minutes until they are just tender. Let the sweet potatoes cool for 5-10 minutes before halving them lengthwise and fluffing their flesh with a fork.⠀
While the sweet potatoes are roasting, make the crispy chickpeas. Drain and rinse the chickpeas. Pat them dry with paper towels. Remove any loose outer skins. In a small bowl, toss the chickpeas with 1/2 tablespoon olive oil, 1/2 teaspoon kosher salt, 1/4 teaspoon black pepper and cumin. Spread them in a single layer on a parchment paper-lined sheet pan. Bake for 25 – 35 minutes until crisp and browned, gently shaking the pan about halfway through cooking.⠀

    Stuffed and baked potatoes are such a popular dinner option, and why wouldn't they be - they're simple, delicious, and perfect for adding your own distinct touch!

    Recipe
    Ingredients:⠀
    4 medium sweet potatoes⠀
    1-15 ounce can chickpeas⠀
    1 tablespoon olive oil⠀
    1 teaspoon kosher salt⠀
    1/2 teaspoon black pepper plus more for serving⠀
    1/2 teaspoon cumin⠀
    1 cup baby spinach, roughly chopped⠀
    2 tablespoons tahini⠀
    Flaky sea salt for serving⠀
    Crushed red pepper flakes for serving⠀

    How To Make:
    Preheat the oven to 375 degrees F. Prick the sweet potatoes with a fork and roast for 45-55 minutes until they are just tender. Let the sweet potatoes cool for 5-10 minutes before halving them lengthwise and fluffing their flesh with a fork.⠀
    While the sweet potatoes are roasting, make the crispy chickpeas. Drain and rinse the chickpeas. Pat them dry with paper towels. Remove any loose outer skins. In a small bowl, toss the chickpeas with 1/2 tablespoon olive oil, 1/2 teaspoon kosher salt, 1/4 teaspoon black pepper and cumin. Spread them in a single layer on a parchment paper-lined sheet pan. Recipe
2 almond tortillas heated up on medium high in a pan sprayed with avocado oil, (I heated the spinach in the same pan while the tortillas were cooking). Mash some black beans onto one side of the tortilla and add a sprinkle of cumin, then top the beans with vegan Gouda (or any cheese or your choice). Once the cheese starts melting add some of the wilted spinach and some mashed avocado and fold over. Cook for another 30 seconds or so. Mango Chipotle sauce: 1/2 ripe mango blended with 1-2 tablespoons chipotle sauce (or any hot sauce if your choice)

    Chocolate, raspberry and chia jam celebration cake by @panaceas_pantry!! 🍫🍰

Ingredients (almond brownie base). 3/4 cup almonds (activated)
1/4 cup shredded coconut
1 Tbsp cacao/cocoa powder
Pinch salt
6 medjool dates, pitted
1 Tbsp roast almond butter

1. Add first 4 ingredients to a high-speed food processor and pulse until small crumbs form. 
2. Add dates and almond butter and pulse. Add an extra date if the mix isn’t sticky enough. Press base into a lined 7 or 8 inch springform cakepan. 
Chocolate layer

1 1/2 cups raw cashews, soaked 4 hrs then drained
2 Tbsp cacao powder
1 tsp vanilla extract
1/2 cup coconut milk
1/3 cup pure maple syrup
30g cacao powder, melted*
1 Tbsp coconut oil, melted*

1. Add all ingredients to a high speed blender and blender until silky smooth. Pour over base and set in freezer for 30 mins.

Raspberry chia jam 
1 cup raspberries 
1 tsp chia seeds
1 tsp pure maple syrup 
Splash water

1. Add all ingredients to a saucepan and cook over low heat for approx 10 mins, stirring throughout. Allow to cool for 10 mins, then spread over chocolate layer. Set in freezer while you make the next layer.

1 cup raw cashews, soaked 4 hours then drained
3/4 cup raspberries 
1/2 cup coconut milk
1/4 cup pure maple syrup
30 grams coconut butter, melted*
2 Tbsp coconut oil, melted*
Squeeze lemon juice

1. Add all ingredients to a high speed blender and blender until silky smooth. Pour over chia layer and set in the freezer overnight. Allow to thaw in the fridge the next day, and top with fresh fruit before serving. *to melt coconut oil and cacao butter, set in a heat proof bowl over simmering water. Once melted, remove from heat and allow to cool before blending with remaining ingredients.

3 cups vegetable stock
1/2 cup curry paste, I used @chefschoicefoods massaman curry paste 
3/4 cup coconut milk @chefschoicefoods 
1 tsp chili powder 
1 tbsp curry powder 
2 tbsp vegetable oil
1 yellow onion 
2 tbsp sliced lemongrass, white part only (slice off the lower bulb) 
6 curry leaves 
Salt & sugar to taste .

Wonton wrappers 
2 cups all purpose flour 
1 cup boiling water 
Pinch of salt .
Curry tofu filling 
1 block of firm tofu, drained & crumbled
1 yellow onion, diced 
1 cup pak choy, julienned 
1 cup spring onion. diced 
1 tbsp minced ginger 
2 cloves minced garlic 
2 tbsp curry paste, @chefschoicefoods massaman curry paste 
1 tbsp vegetable oil 
Salt and pepper .

To make the soup 
Heat vegetable oil in a pot over medium heat. Add curry paste and cook until fragrant. Add vegetable stock and cook over high heat. Then stir in onions, lemongrass and curry leaves. Once it boils, lower the heat and allow to simmer for 10 mins. Add coconut milk and cook at high heat again. Once it boils, lower the heat. Add salt and sugar to taste. .

Filling 
In a large skillet over medium high heat, add oil and cook onion. ginger, garlic until fragrant. Add tofu, pak choy stir-fry for another 2 mins. Then add the curry paste and mix well. Stir in spring onion. Turn off the heat.

In a stand mixer, add all ingredients and mix until you have a rough ball shape. Dust your work surface, knead dough until smooth. Let dough rest for 10 mins. Lightly dust your counter-top, roll out the dough to your desired thickness, aiming for a rectangle roughly 20”x10” then cut into small squares. .

Take a wrapper, add about 1-2 teaspoons of filling. Wrap and firmly steal. .

Bring a large pot of water to a boil. Add wontons and cook until they are completely cooked through. Drain wontons and transfer to a serving bowl. Serve with curry soup, bean curd tofu and enjoy!
