    I’ve had a chip on my shoulder for a long, long time.
::
It comes from wanting to prove that I’m the best at anything I do… so that I can feel good enough to be seen and loved. ::
If I’m the best at something, then I’ll be valuable and desirable… and therefore won’t be abandoned.
::
So, the swagger of my youth, the trying to please everyone, the addictive drive to be the best at everything… it didn’t feel humble. At all.
::
When you see someone being braggadocios, peacocking, trying to impress everyone, you might think, “Man, they’re SUCH a douche!”
::
But underneath the perceived lack of humility and blatant hubris, lies a very wounded soul looking for inclusion, attention, safety and love.
::
I know because I was that person for years. And some days, shit, I still am. But as I go on in life, I’m starting to really be present to and savor the joy of engaging in activities because they bring me (and others) joy. Not because they need to make me rich, famous, different or unique. Just focusing on the joy of being.
::
And also realizing that trying to win people’s love by being perfect or the best at something is an exercise in insanity and illusion.
::
As I’m shedding the idea that I have anything to prove to anyone, I feel a natural humility, calm and contentment starting to slowly creep into my heart.
::
From my perspective, the more I fully accept, love and truly care for myself, the less desire I have to brag, show off, name drop, or prove a damn thing.
::

Bailey loves iceblocks! Just ask her Grandma who keeps a freezer stocked full of them for when Bailey is at her house.

Because of Baileys obsession with these sweet icey treats we have been making our own.
.
We juice or blend whatever fruit we have on hand, stick a popsicle stick in and freeze. The hardest part here is trying to freeze them with an excited 2 year old opening and closing the freezer to see if they’re ‘done yet?’.
.
This is a super simple science activity to do with your little ones as you can chat to them about solids vs liquids.
Discuss things like;
- Colour/shape/texture - The change in temperature
- How the liquid expands.

    OK, but, cauliflower is the real MVP. 😂 I’ve used it in more than one way for meals this week and I have to say, I might be hooked. 🥴 I present to you 🎤 pineapple-teriyaki “chicken” and “rice” with bell peppers, avocado and cilantro. 🍍🥑🌶 I used riced cauliflower (a veggie) instead of more carbs, vegan soy chicken, and subbed your typical salt bomb soy sauce for coconut aminos + pure pineapple juice. 🤤 Satisfied and guilt free. 👌🏼

    Now THIS is a bowl of goodness! 🤤 Charred asparagus, soy glazed mushrooms, creamy oil-free hummus and crispy crinkle potatoes with an abundance of herbs and spices by @cookingforpeanuts 🌱 Also totally oil and gluten-free!

Recipe
1. Charred asparagus: Heat on high a cast iron or heavy skillet. (Optional: add a small amount of oil.) Add trimmed asparagus pieces to hot skillet in single layer. Cook until lightly charred, about 2 minutes, without moving. Cook about 5 minutes more until crisp-tender and evenly charred. Remove from heat and let sit a minute. Toss with squeeze of fresh lemon and ‘Bragg organic sprinkle herb and spices seasoning’ or dried herbs of choice. Salt to taste.
2. Oil-Free Hummus: In high speed blender, blend on high 1-15oz can (or 1-1/2 cups cooked) chickpeas, 1/3 cup aquafaba bean liquid from can (or cooking water), 2 garlic cloves, 1/3 cup tahini, 3-4 tbsp fresh lemon juice, 1/2 tsp chili powder, 1/2 tsp paprika, 1/2 tsp cumin. Add more bean liquid if needed and adjust seasoning and salt to taste.
3. Soy glazed mushrooms: Cut about 3/4lb crimini or white mushrooms into approximately 1/4 inch thick slices. Mix together: 1.5 tbsp reduced-sodium tamari/soy sauce, about 2 tsp sriracha, 2 tsp maple syrup. Sauté mushrooms until starts to brown. Add sauce mixture above and sauté another minute until starts to stick to pan.

    🍔😍 Vegan Spicy Patty Sandwich! 📷 by @vegancaveman 🚨🚨Recipe: Makes 4 sandwiches
Patties
1 cup wheat gluten
3 tbl nutritional yeast
Spices: 1 tsp onion powder, 1/2 tsp salt, 1/4 tsp oregano, 3 tsp cayenne pepper, 1/4 tsp black pepper, 1/2 tsp smoked paprika, 1/2 tsp garlic powder
2 tbl hot sauce
1/4 cup + 2 tbl vegetable broth
1/4 cup tahini
6-8 cups low-sodium vegetable broth, for boiling

1.mix together all the patty ingredients except for the vegetable broth for boiling. Using your hands knead the mixture for about 4-5 minutes. Add more broth if too dry and seems crumbly. Knead until mixture is elastic. Make sure to get the 6-8 cups of veggie broth on high heat so it starts to boil.
2. Form the mixture into four patties that are slightly triangle-shaped. They plump up while boiling.
3. Once the broth is boiling, add all four patties to the pot. The patties should be completely covered. Cover the pot + reduce to medium-to-medium low heat and boil for 50 minutes. Place on a drying rack or plate once done.
4. While the patties boil, mix together the pepper sauce in a shallow bowl as well as add the one cup of all-purpose organic flour to a large plate with a sprinkle of garlic powder, smoked paprika, salt + pepper. Set them aside and wait for the patties to finish boiling. During this time, you can chop tomatoes into slices and chop up romaine lettuce.
5. While the patties dry, place a cast iron pan over medium heat for 2-3 minutes. After the patties have dried for 5-10 minutes, place into the flour mixture and coat both sides.
6. Next dredge the patty in the pepper sauce and then coat again in the flour. Repeat for all four patties. Add 2 tbl of vegan butter to the pan. Once its popping add the patties.
7. Cook the patties on each side for roughly 4 minutes until browned and crisping on the sides.
8. Lastly, place the patty between two halves of a toasted ciabatta with some romaine lettuce, a couple tomato slices, and VEGAN MAYO!

    Bitter Chocolate Fudge Cake Ice Cream by @schoolnightvegan 💜

For the Ice Cream
200g raw unsalted cashews (soaked in boiling water for 1 hour)
310g water
210g sweetened condensed coconut milk
70g boiling water
40g cocoa powder
20g odourless coconut oil
100g dark chocolate (finely chopped)
1 tsp freeze dried espresso powder
pinch salt

For the Cake Pieces
3/4 tsp psyllium husk powder + 3 tsp water
55g plain flour
1 tsp baking powder
18g cocoa powder
2 tbsp boiling water
25g vegan margarine
68g granulated sugar
38ml oat milk

To Make the Cake Pieces
Preheat the oven to 180c and line a cupcake tray with 3 cupcake cases.

In a small bowl combine the psyllium husks and the water. Mix and set aside to thicken.

In another small bowl, measure out the flour and the baking powder. Stir to combine and set aside.

In the bowl of a stand mixer, add the cocoa and the boiling water. Fit the paddle attachment and beat until smooth. Add the vegan margarine and psyllium egg and beat until smooth (the psyllium tends to clump very easily, so make sure you beat very well). Add the remaining cake ingredients and beat until just combined.

Divide the batter between the six cupcake cases and top each cup of batter with one tsp of the chilled caramel.

Place in the oven and bake for 30 minutes. Once baked, remove from the oven and allow to cool briefly in the tin before removing each cake delicately and allowing to cool fully on a wire cooking rack.

Once cooled, remove the cupcake cases and slice the cakes into 1/2cm - 1cm cubes. Place the cubes of cake on a baking tray and spread out so they’re touching as little as possible. Place in the freezer to firm up. 
To Make the Ice Cream
Drain the soaked cashews and discard the soaking water. Place the cashews in the cup of a high-speed blender along with the 310g of water. Blend until very smooth then pour out into a large bowl. To the bowl add the sweetened condensed coconut milk. Whisk to combine then set aside.

    3/4 tsp psyllium husk powder + 3 tsp water
    55g plain flour
    1 tsp baking powder
    18g cocoa powder
    2 tbsp boiling water
    25g vegan margarine
    68g granulated sugar
    38ml oat milk

    To Make the Cake Pieces
    Preheat the oven to 180c and line a cupcake tray with 3 cupcake cases.

    In a small bowl combine the psyllium husks and the water. Mix and set aside to thicken.

    In another small bowl, measure out the flour and the baking powder. Stir to combine and set aside.

    In the bowl of a stand mixer, add the cocoa and the boiling water. Fit the paddle attachment and beat until smooth. Add the vegan margarine and psyllium egg and beat until smooth (the psyllium tends to clump very easily, so make sure you beat very well). Add the remaining cake ingredients and beat until just combined.

    Divide the batter between the six cupcake cases and top each cup of batter with one tsp of the chilled caramel.

    Place in the oven and bake for 30 minutes. Once baked, remove from the oven and allow to cool briefly in the tin before removing each cake delicately and allowing to cool fully on a wire cooking rack.

    Once cooled, remove the cupcake cases and slice the cakes into 1/2cm - 1cm cubes. Place the cubes of cake on a baking tray and spread out so they’re touching as little as possible. Place in the freezer to firm up.
    To Make the Ice Cream
    Drain the soaked cashews and discard the soaking water. Place the cashews in the cup of a high-speed blender along with the 310g of water. Blend until very smooth then pour out into a large bowl. To the bowl add the sweetened condensed coconut milk. Whisk to combine then set aside.
