    Tapenade de betterave

Idéal sur des tartines ou pour accompagner un bowl🥗. J'ai trop envie de fraîcheur avec ses chaleurs☀️.
Après avoir déguster une délicieuse tartine au houmous de betterave chez @blend_fr j'ai eu envi de tester une version at home.

Recette improvisée pour ceux qui aime les goûts prononcés🤤🤤🤤 :
J'ai mixé 2 petites betteraves avec 2 cu à soupe de skyr + 2 cu à s de jus de citron + un morceau de camenbert fondu 🧀(voilà l'ingrédient chelou qui fait toute la différence)

Je teste ce week-end une version plus classique version houmous de betterave pour les réfractaires au fromage😋

Necesitaremos:
4 milanesas de pechugas de pollo partidas a la mitad
1 frasco de tapenade de aceitunas negras
8 cucharadas de queso de cabra
400 gramos de tomates cherry
olivo, sal y pimienta
Perejil picado
En una superficie plana colocamos las milanesas y las salpimentamos por ambos lados, les colocamos a cada una de ellas una cucharada de tapenade de aceitunas negras y una cucharada de queso de cabra y las enrollamos.
Colocamos una sartén a fuego medio y agregamos olivo ponemos las milanesas y las doramos, después tapamos por 10 minutos, las reservamos en un platón, en el mismo sartén en donde cocinamos las milanesas salteamos los tomates cherry con un poco de olivo, sal y pimienta por unos minutos y después los servimos arriba de las milanesas.

    I have been noticing a trend developing in the South of France: Pick a commonly used ingredient like chickpeas, roasted peppers, sun-dried tomatoes or even basil; make it spreadable, then add the suffix ade and voila, you have a fabulous finger food to serve at your next apéro.

Indicating a drink made from a given fruit: ‎lemon + ‎-ade → ‎lemonade

I am sure this has existed for quite some time but I never really paid much attention to it until our last few trips to France where I noticed more and more market vendors offering pre-made spreads, the most common being olivade, a variant of tapenade that excludes anchovies and capers from the famed olive spread.

We became enamored with poischichade, which is basically hummus made without tahini then flavored with a healthy spoonful of cumin, after meeting a chickpea vendor at the Isle-sur-la-Sorgue market while on the search for pre-made picnic foods to snack on. Our son Beau became so thoroughly addicted to poischichade (pwah-she-chade) shortly after. He hoarded the first container we bought in the back seat of our Renault, muttering something about my precious as he dipped an endless stream of baby carrots and cucumber slices into it. These are fantastic easy to make dips and spreads that you really should give a try. In fact, if you are the sort of person that cannot be bothered at all to make four spreads in less than 30 minutes you should visit our friends at @rememberprovence who sells an incredible line of pre-made, authentic dips direct from Provence.

    I love olives but I have never made a tapenade with them or used it in a dish before. All that changed tonight when I came across this recipe for Provencal Fish, Black Olive Tapenade and Mash by @goustocooking. I tweaked the recipe a little and used a cod fillet , added smoked paprika to the piperade and instead of mash made smashed turmeric baby potatoes. The tapenade and cod combination tasted just heavenly and the piperade complimented the dish so well. This recipe is definitely a keeper!

    Sometimes the simple meals are so good. Let’s be fancy and call this “rustic” - although really I only had moments to make dinner because I went to happy hour after work... hehe.

HOW TO MAKE DINNER IN 10 MIN:
1. Slice and toast a few slices of fresh bread from @whitelotusfarms 
2. Grab your food processor and add 1 cup pitted and drained kalamata olives, 1 cup green olives, 1/3 cup sun-dried tomatoes, 1/3 cup fresh basil, 2 cloves garlic, 1 Tbsp olive oil, and 3 Tbsp lemon juice. Pulse until it reaches your desired texture and spread on that toast!
3. Serve with a big salad. I grabbed a 5oz bag of arugula and added 3 chopped tomatoes and chopped a large hunk of fresh mozzarella, also from @whitelotusfarms. I dressed it with a little olive oil, balsamic vinegar, salt, and pepper. 
Voila! Dinner is served! I feel like I should be on a picnic in a rolling French vineyard! 🥰🥰🥰
