Yesterday I tested the #trimmdichpfad. 20 workout stations on a beautiful round through the forest. It was 15 km away from my home so I went there by bike 🚴 it was worth it 😍 its now on my favorites list for outdoor training 😆

    Sunday Funday at @themojomarket  today... and to make this day even better... NO LOADSHEDDING 🎊🎉🎋🎀🎁
that means we can start making ice cream again... 😁  we apologise for not having ice cream available over the past week, quality is very important to us, and our machines were going on and off 3 times a day causing melting and refreezing 😥🙈 we lost so much stock because of Eskom.  But today, we are giving it horns... 😎

    SUPER SIMPLE BANANA CHIPS
ingredients:
1 banana 
avocado and/or coconut oil 
salt
cinnamon (optional) 🍌🍌🍌 finely slice one banana 
drizzle or spray your oil over all slices
sprinkle with sea salt (and cinnamon)
bake at 400° for 10-15 min (Keep an eye on them as they do crisp up quickly!!)

    Hot cross bun season is upon us folks! 
If you're looking for a healthy easy delicious fluffy bun, just head over to @nourishandthrivenz and pick up a Paleo Hot Cross Bun mix. 
It's GF and low in sugar, made with nutrient dense flours and I made these vegan by substituting egg for chickpea water (my latest favorite egg replacement) and it worked amazingly well. 
Served warm alongside @bu.deli butter, melt in your mouth goodness!

Ingredients
4 boneless skinless chicken breasts
1 tablespoon oil
salt and pepper, to taste
1/2 teaspoon each dried oregano, thyme, and basil
1/2 teaspoon garlic powder
4 slices Cache Valley Sliced Provolone Cheese
1/2 cup Cache Valley Shredded Mozzarella Cheese
1/2 cup Cache Valley Shredded Six Cheese Italian Cheese
2 tablespoons butter
1/2 cup balsamic vinegar
.
Instructions
Preheat oven to 375 degrees. Use a sharp knife to cut a pocket horizontally in the thickest side of each chicken breast, being sure not to cut all the way through. 
Place one slice of provolone cheese in the pocket, topped with 1/4 of the mozzarella, and 1/4 of the six cheese Italian. Use toothpicks to close and secure the opening. 
Drizzle chicken breasts with olive oil. Season with salt and pepper, oregano, thyme, basil, and garlic powder and use your fingertips to rub seasonings into the chicken. 
In a large oven-safe skillet (see note) over medium-high heat, melt butter. Once almost melted. Add chicken and brown on each side for 2-4 minutes. Whisk together the balsamic vinegar , pour over chicken and cook 2 minutes longer. 
Transfer pan/skillet to oven and bake for about 15-20 minutes until chicken is cooked through and cheeses are melted. Spoon balsamic sauce from the pan over the chicken, top with fresh basil if desired, and serve. .

makes about 3-4 servings

Ingredients:
1 lb. raw shrimp, peeled and deveined
2 Tbsps olive or avocado oil, divided
(I use avocado oil for cooking, and olive oil as the drizzle/dressing)
1-2 fresh garlic cloves, minced or pressed
2 large avocados, diced
8 oz. mixed cherry tomatoes, cut in half 
1 green chili, seeded & sliced
a good handful of fresh cilantro or flat-leaf parsley leaves, chopped
1 large fresh lemon, both juice and zest of 
sea salt and fresh ground black pepper

Instructions:
Heat one tablespoon of oil in a large skillet over medium-high heat.

Add shrimp, and minced garlic, then cook for 3-4 minutes, or just until shrimp turns pink and is no longer translucent.

Season shrimp with sea salt and pepper to taste, remove from heat.

In a large bowl add cooked shrimp, chopped tomatoes, diced avocado, sliced chili, and chopped cilantro leaves.

Drizzle with remaining 1 Tablespoon of oil and squeeze in your fresh lemon juice, add zest, then very gently toss to combine everything together.

Adjust seasonings to your taste and enjoy!

I prefer this salad eaten within a few hours of preparing, but it stays good in the fridge for a day or two.
