    One of our favourite autumn traditions is making toffee apples. In previous years we have made them with natural sugars which created a nice sticky coating but this year I decided to do them properly with sugar and a candy thermometer to achieve the hard toffee coating. They were so beautiful and shiny and the kids were entranced. We made these in an old pan on the fire placed directly on the flames. This basic recipe makes about 15 apples as we were making them with a group of friends. 🍎First have the children whittle sticks and spear an apple firmly on the end. Place 600g raw caster sugar in a pan with 200ml of water, heat over the fire (or on the stove) and stir until sugar dissolves. Remove from heat and add 6tbsp of golden syrup and a generous splash of apple cider vinegar. Return to heat and boil rapidly for 3-5 mins keeping an eye on your candy thermometer. When it reaches 150C or "hard crack" remove from heat and dip the apples quickly before it sets. We had the kids line up and placed the pan on a tree stump and they took turns walking by and dipping and then standing in space whilst it cooled so there was no chance of any accidental drips- boiling sugar burns are awful so be careful!🍎

I had intended to make some cool leaf art  but we ran out of time and I couldn't find any of leaves I needed  in a 1km radius  from our house, so we just drew over the little veins on various gum leaves. A simple activity and  now I have some new book marks for the twenty books I've got on  the go at once. 😀👍👍

    It's super important for kids to be properly dressed in order to enjoy an outdoor classroom. Maybe you've heard the Swedish saying, "There's no such thing as bad weather, only bad clothes." Even on good weather days, you have to take into account how children will move through the environment. On a nice Spring day, will they be kneeling or rolling on the ground? Will that ground be damp or muddy?  Waterproof outerwear can mean the difference between immersing themselves in an activity or feeling distracted by being wet and uncomfortable. Dry kids=learning kids!

    Matilda and her little friend @booksformytoddler had a love afternoon. Making mud pies, finding frogs, painting, eating toast & exploring whist holding hands 😍 Matilda’s mud kitchen has two large Belfast sinks either side one with water and one with compost/mud. She loves using the different pans and spoons to mix and create! It’s still not finished (maybe in the summer 🤦🏼‍♀️)

    🧘🏼‍♀️Day 12 - Scavenger Hunt 🍁 #MindfulinMarch We love colour nature scavenger hunts and made an Autumn board inspired by the wonderful @themakermum Nature Hunt board. 😍 We took our board to the park play that followed our HS lego club today and then went for a walk nearby our house to find more treasures. 🍃🍂

Last night's Snow Moon and stargazing inspired some starrific activities today! We started using  our Night Sky Pack from @fiddlesticks.kids. Becca's watercolor pieces print so nicely, and made for a beautiful evening backdrop for constellation making!.

Then we got a little crafty with more star clusters! We used our solar activated paper from @natureprintpaper and acorn caps for the Big Dipper, also known as the Starry Plow in England and Ireland. Using nature's loose parts didn't stop there - we grabbed some sticks and stones and Zoe choose to make Orion next.. ..
Tomorrow, we're off to the moon!

    I’m ready for spring. We haven’t seen any snow here on Long Island but I’m still done with winter. This morning there were birds chirping but it was 22 degrees! I bought some sunflowers to brighten up the place and I’m looking through some old springtime pictures and getting inspired.🌿🌻🌷🌳

    🧘🏼‍♀️Day 20 - Feather 🦜 #MindfulinMarch Audrey and Avalyn had a go painting some feathers found in our backyard. Avalyn’s is to the right. Audrey tried patterns and a marbled/tie dye effect. ✨
✨So special and grateful to be able to have a constant supply of feathers in our yard from our bird friends. The Fawns love connecting with these beautiful creatures as they sparked a love of birds in their nature study through watching and talking to them. 💜
