    This is my favorite book right now. I've only just started reading it, and I already have big plans for every available jar, shelf, and nook in my house. The author is infectiously passionate about fermenting things, and has essentially written the textbook on it (this is so much more than a cookbook, although there are many recipes).⁣

I love this passage from the forward by Michael Pollan: "It is a cookbook...it tells you how to do it, but much more important, it tells you what it means, and why an act as quotidian and practical as making your own sauerkraut represents nothing less than a way of engaging with the world. Or rather, with several different worlds, each nested inside the other: the invisible world of fungi and bacteria; the community in which you live; and the industrial food system that is undermining the health of our bodies and the land..."⁣

"...To ferment your own food is to lodge an eloquent protest--of the senses--against the homogenization of flavors and food experiences now rolling like a great, undifferentiated lawn across the globe.     My backyard garden morning haul!  The first pic is a CocoZelle zucchini- my FAVE!  The next pic is the same zuke (flip flop for reference 😁), along with summer squash and a few fancy Panache Pattison something or another scalloped edge squash.  LOL- long day at work and I can’t recall the exact name, but it’s tasty, mild and I GREW THEM IN MY YARD 🙌🏼👩🏼‍🌾.     Hey guys keeping it simple today with salad idea…

I try to incorporate at least 1 salad 🥗 a day… Its a great way to get the micro nutrients in 💪… Today I have some marinated chicken as my protein source and a yoghurt based dressing, recipe below… 🍅 Building a sexy colourful 🌈 salad 🥗 is so simple… .

1️⃣ Pick a leafy base 🥬… Spinach, lettuce, kale etc. .

2️⃣ Pick 2-3 more veggies 🍅 🥒🌶, tomatoes, cucumbers, peppers, carrots, zucchini, onion etc. .

3️⃣ Pick a protein 🥚🍗 eggs, tofu, chicken, tuna, salmon etc. .

4️⃣ Add a dressing olive oil + lemon, vinegar, avocado oil, tahini.

So simple 😍… ∙

Today I had. . ∙ Spinach . ∙ Tomatoes🍅 . ∙ Cucumbers 🥒 . ∙  Red Onion . ∙ Marinated chicken breast (olive oil, salt, black pepper, paprika, chilli powder, garlic powder). I cooked the chicken on the stove top on medium heat for around 8-10 minutes until browned and cooked through. . ∙ Greek Yoghurt dressing Recipe below 👇🏼
. ∙ Dressing Recipe.
. ∙  ½ cup greek yoghurt.
. ∙ 1/2 Tbsp wholegrain mustard (dijon). . ∙ 1 stalk of spring onion / shallot.
. ∙ ½ tbsp lemon juice.
. ∙ ½ tbsp olive oil.
. ∙ 1 clove garlic, minced (if you don’t like it too garlicky use ½).
. ∙ Pinch of salt & pepper to taste. .
