Created a new 20 minute dish tonight that looks like pasta & tastes like pasta, but contains no pasta!

Roasted Cauliflower 
Sautéed Mushrooms & Spinach
Sauce:
Blended cashews, tomato sauce, & garlic.

    These lamb barbacoa tacos were terrific!

We enjoyed these tacos, made by Chef Mario Medina of MM, at a recent food and wine pairing dinner. 
__

Chef Medina made his barbacoa from lamb shoulder, ribs and leg that he slow-cooked in a covered pan with avocado leaves and garlic for 6 hours, so that it steamed. He served the lamb with two sauces: --The first was avocado sauce flavored with habanero. --The second was salsa macha, which Chef Medina made from three kinds of dried chiles--puya, guajillo and pasilla. He fried them and blended them with garlic and three kinds of nuts--almonds, walnuts and pecans, then finished the sauce with extra virgin olive oil, "like for making hollandaise." For garnish he made onions pickled with salt, oregano and rice vinegar.

The tacos were served with 2016 Sauvignon Blanc from Herencia Wines in Napa Valley.

The dinner, which took place at Don Chente Bar Grill & Lounge, showcased some of the dishes that will be featured at Altamed's triple celebration of Latin food and wine. The three festivals--Grand Tasting, East LA Meets Napa, and OC Meets Napa, will take place in Los Angeles and Orange Counties from July 26 to 28.
