    Weeknight cooking: @showmetheyummy’s Mexican Vegetable Soup (found vía @glowbodypt☺️). This soup yielded three and a half mason jars of leftovers🙌🏽 I subbed carrot for zucchini and topped with cilantro, avo, sour cream, and a few tortilla chips. Next time I would add hominy😋 We’ve been making a big batch of black beans every week or so and this is a tasty way to use them!

    Pasole 🐷🍲🌶


    •1 whole yellow onion cut in half.
    •2 whole garlic bulbs with the tops cut off.
    •1 extra large can of white hominy.
    •1 pork shoulder bone in.
    •4 Priscilla peppers.
    •4 California peppers.
    •4 Ancho chili’s.
    •4 tablespoons of beef broth. (Might need to add more closer to serving.)
    •Salt and pepper to taste.


    • Bring a large pot of water to boil add in onion, garlic, beef broth, hominy.
    -cut pork shoulder in large chunks put the skin, bone and meat in to the water and allow to cook. (2 hours on a low simmer.)
    -While the meat is cooking brown all of the peppers in a little bit of oil and then submerge them into a bowl of water and allow to sit for 15 mins. Then take the steams off and put them in to the blender with some of the water they were soaking in. Blend until smooth. Take that mixture and add it back to the pan you browned them in and cook for 10 mins stirring frequently I add in a little salt and a table spoon of butter.
    -Pull pork out and shred the meat (discard skin and bone) add it back into the broth and add your pepper sauce let it simmer for about 20 mins before serving.

    Rainy days call for warm, comforting food (duh) like homemade pozole, a traditional soup from Mexico made from hominy (dried maize kernels) and meat (pork and chicken all up in this bowl!) and topped with your favorite garnishes. We like cilantro, radishes, lime, green onion and avocado! Thanks @caroperezmansfield for the treat 👌🏼

    Recupérate del fin de semana con esta SOPA calientita de PASTA y pollo! 🍲
    PORCIONES: 4

    INGREDIENTES:
    - 8 tazas de agua
    - 1 pechuga de pollo con piel y con hueso
    - 1 cda de cilantro
    - 1 hoja de laurel
    - 1 rama de apio en trozos
    - 1/2 cebolla
    - 1 cabeza de ajo
    - 1 cda de sal
    - 4 cdas de aceite
    - 200 gr de fideo
    - 1 taza de brócoli en arbolitos
    - 1 taza de chayote en cubos
    - 1 taza de calabaza en cubos
    Para acompañar:
    - suficiente aguacate
    PREPARACIÓN:
    1. Calienta en una olla agua y cocina la pechuga de pollo con el cilantro, el laurel, el apio, la cebolla y el ajo hasta que el pollo esté cocido. 
    2. Sazona con sal, cuela el caldo de pollo y reserva. 
    3. Deshebra la pechuga de pollo.
    4. En una cacerola a fuego medio, calienta el aceite y fríe los fideos hasta que cambien ligeramente de color.
    5. Agrega el caldo, el pollo deshebrado, el brócoli, los chayotes y la calabaza. Cocina por 10 minutos más o hasta que el fideo esté suave y las verduras cocidas.
    6. Sirve caliente, decora con aguacate y acompaña con limón.

    I like cooking, it relaxes me, I like to create, colorful things too, I like painting, I like restoring furnitures, the soup below is rather simple, #mexicansoup #pollo #chickensoup ; I don’t use boxed broth, I cook my own chicken water, in the separate pan adding onions, celery and jalapeño on avocado oil, sauté and add chicken broth,adding canned organic petite diced fire roasted tomatoes, juice of limes, cumin, pepper, powdered garlic, liquid seasoning (sort of like soy sauce) can of corn , when serving cutting up avocado, cilantro and some tortilla strips, little spicy 🌶, but delish, good when catching cold or you feel under weather; yummy, peace out ✌️❤️

    With this cold weather all I crave is soup. This tortilla soup is a meal in itself. I like mine on the thicker side served with classic crunchy corn tortilla strips, avacado, cheese and sour cream. Authentic tortilla soup usually is topped with queso fresco but I had a mix blend cheese on hand. I used homemade chicken stock for mine (will post recipe soon) but I know that's a bit more time consuming so store bought stock and rotisserie chicken work perfectly.
    Ingredients: serves 4-6

    2-3 dried Guajillo chilis
    1 head garlic roasted
    1 med onion roasted
    1 28oz can tomato puree
    1 Carton cheese chicken stock
    1 Tbsp salt
    4-5 Tbsp olive oil

    Toppings :
    Shredded rotisserie chicken
    Cilantro
    Sour cream
    Tortilla strips
    Queso fresco (or cheese of choice)
    Lime wedges

    Directions:

    Soak your dried chillis in hot water to soften them. While they're soaking roast (400 degrees F for 30-40min)a peeled onion cut in half and garlic head with a good drizzle of olive oil until nice and caramelized or until garlic bulbs pop out of skin.

    Once chilis have softened and pliable use scissors to cut off stem and cut down the middle and discard seeds. Cut each chili into 5-6 small strips and set aside.

    Heat up a large pot over med heat and 2-3 Tbsp olive oil. Squeeze the roasted garlic out of skin into the oil. Add onion and cut chilis. Sauté for a few min, add the can of tomato puree, salt and Carton of stock. Bring to a boil then simmer for 30min to let flavors develop.

    Take off heat and use immersion blender to puree. I like to add tortilla chips first then ladle soup on top then go crazy with whatever toppings your heart desires but finish off with more tortilla strips on top for extra texture. 😉😋 ***For homemade tortilla strips cut corn tortilla night before and let then dry on sheet. This will prevent them from soaking in too much oil before you bake. Lightly toss with olive oil abd bake at 350 degrees F for 15-20min. Keeping an eye out last 5 min as they can easily burn. *** or just crunch up some store bought tortilla strips. 😜

    Thématique mexicaine cette semaine chez nous... Dimanche des tortillas coupées en morceaux et passées au four pour les rendre croustillantes à tremper dans une sauce blanche épicée et ce soir les mêmes par dessus une soupe mexicaine (inspirée de la soupe de tacos @lloydlng pimpée avec du poivron, du panais, du maïs) trop fácil à faire et à réchauffer... On a juste fait les chips de tortillas au dernier moment. La soupe était plutôt douce (kids friendly) et les chips un peu plus relevée 🤤 🌮 nos enfants aiment plutôt les soupes avec des morceaux (comme celle ci ou la minestrone...) Avec des pâtes ou des petits trucs à rajouter par dessus ça passe mieux.. La côte ludique aide je pense... #eatwithme #mexicanfood #vgfood #platmexicain #soupemexicaine #mexicansoup

    Oj vad trötta vi blev efter busfabriken liksom hehehe, efter 4,5timmar bus o sköj så var du gumman grymt nöjd o lilla pappa också förståss.
    Idag fick du ju träffa busfabrikens maskot elefanten och där hehehe har du delade känslor du kan ju inte riktigt bestämma dig, som du säger själv lilla gumman "pappa han finns på riktigt" han träffade dig o klappade dig o du blev rädd så rädd att du sa pappa jag vill åka hem och vi gick ut ett tag o sedan när jag sa att elefanten gått hem så ville du in igen 😂 sedan har du "tjatat om hur riktig och söt han var o du fick träffa honom ända tills vi somnade ihop 20:45.

    Pappa somnade också äju så mysigt att sova ihop med dig gumman, vi vaknade hehehe 02:40 o asså shit vi aa du o jag gick upp o åt pappas Mexicansoppa o coola o sedan gick vi ut mitt i natten med våran söta hund 🐶, pappa fick bära dig som många andra gånger o det gör inget när du är rädd för mörkret(mörkret är för pappa finnast o tryggast) så där ska vi träna bort alla rädslor gumman, joo när vi har en skitnödig hund o såå stor o jag får bära dig så YEAH så måste jag hålla balansen bra 😂.

    today’s a perfect day for some piping hot soup 🍲. the base is just onions, garlic, green chile and hominy, seasoned with cumin. add in some shredded chicken (you can cook and shred or simply use rotisserie. i just used leftovers here) and broth of your choice. then i topped it off with avocado, cilantro, sour cream and... i would have done a lime, but all i had was lemon. so when life gives you lemons, just say f*ck it and squeeze it into your mexican chicken soup! oh, and the tajine, don’t forget about the tajine! 😁
