    On this episode of “What is currently in Bonnie’s cute, vegan tummy!”

CHEEZY CARROT SAUCE DINO MAC & CHEEZE!!

Yum! So I normally make my cheeze sauce (when I’m not being super duper lazy) with butternut squash. Tonight I was only being sorta lazy so I decided to just use carrots. I might like it better!! Please don’t tell my love BNS!💖

Recipe-ish below & pictures to go with it!

Sautéed diced carrots, onion, bell pepper, & celery in coconut oil. I always add a little salt to my veggies when I sauté them because supposedly it helps bring out their juices.

To the veggies I add garlic powder, black pepper, sriracha, tamari, veggie bouillon, Dijon mustard & water. Bring to a boil & then simmer. Keep adding water, bringing to a boil & simmering until the veggies are super soft.

When the veggies are soft use a potato masher to mash them up. You could totally use a blender or food processor but A. mine is at a friend’s house. B. You kind of should wait for the veggies to cool@down before. That’s why I prefer the masher method! Haha

You should probably cook your noodles around now. I absolutely love dino noodles (I get them at Walmart) because Dino’s are life & make dinner fun!! I do salt my water to flavor the noodles. When the noodles are almost finished I take them out of the water & put them in a bowl. I save my pasta water for later.

After I mash the veggies I added some vegan protein broth & nutritional yeast. Gave a stir. Bring to boil. Then summer. I came back to the pot to stir every now & then & even mashed it again a couple more times.

When all that yumminess has some time to hang out I added a little cornstarch & some pasta water to thicken things up a bit. Bring to boil then simmer. Stir occasionally. The cornstarch clumped some but when eating I didn’t notice it. (If you know a better way to add cornstarch as a thickener without clumps please let me know!)

Once that looks ready I added the almost cooked noodles to the pot. Brought up the heat, stirred. Let it all hang out a hot minute.

Then remove from heat & let sit as long as you can stand. Don’t worry if you can’t wait too long. I couldn’t either! EAT & ENJOY!

    If you ever go to @unitydiner (and you should as it's an excellent not for profit restaurant with all funds supporting vegan activism and animal welfare) pleeease try their amazing mac and cheeze with BBQ 'shrimp'... It is SOOO good! Maybe a contender for best vegan mac and cheeze I've eaten in a restaurant?* *No shade to all the chefs who have trained their whole lives to deliver these top qual dishes to the masses but I still prefer my home-cooked mac and cheeze 💁

    Last night we tried the Mac and cheese version from @buzzfeedtasty . I made a change and we did broccoli instead of peas and I served it with a side of lightly salt and peppered avocado. I will say I loved the color of the sauce with this recipe. I really enjoyed the aspect of potato’s and carrots along with the cashews , it really added creaminess to the sauce. I did have to add more season, as the sauce from the recipe was a little sweet and I didn’t want the broccolis sweetness to take the sauce to a level of sweet that I couldn’t enjoy. So. We used hot sauce and a few other seasonings not pictures ( cayenne, garlic powder, pepper, salt, onion power.)I’ve come to the realization, that there is honestly NO alternative for Mac and Cheese! All of these recipes have been great, and we’re yummy... however, they aren’t Mac and cheese. The gooeyness , the cheesiness .... the Mac and Cheesiness... lol! So, the next time I make macaroni and cheese and label it as such, I will be making a recipe all my own! I’m determined to find a Mac and cheese ( not from a box) that I can make with fresh ingredients . Overall though, this recipe made a delicious sauce that I will use again, I just won’t call it Mac and cheese... MORE LIKE SAVORY CHEEZE VEGETABlE SAUCE.     Last night my daughter and I tried another recipe that was created during our @jennamarbles marathon. In the episode where @juliensolomita is making sushi, you see Jenna making Mac and cheese with pease and bacon toppings. We scratched the bacon toppings and I decided to try to make vegan macaronis again, in hopes that I could finally perfect the cheeze sauce. I am proud to say that I 100% have, thanks to the help of the boiling water I soaked the cashews in... lol! Overall the best Mac I have made to date and I really enjoyed the textural difference of adding the peas. #satisfiednotstuffed #veganstaples #macandcheeze #daiya #daiyacheese #peas #foodisfuel #healthynotboring

    I ventured out to @braindeadbrew yesterday for my birthday with some friends. I had their Vegan Queso, Spicy Pickles and their Vegan Mac and Trees.

I enjoyed everything—but that Mac & Trees was phenomenal! I even allowed my friends to eat off my plate to try it. They liked it better than their food. 🙌🏾

    I think we’re all #yogis, and, therefore, all #vegans. Here’s my take on #macandcheeze recipe form @minimalistbaker: boil the noodles and beans, sautee the veggies and nuts (green pepper, cashew, red cabbage and onion), roast the garlic, and season with nootch, mustard, sea salt, olive oil, cayenne, capers, and basil. Put it on a plate and enjoy with homefries. Delicious 🙂⭐️💜
