    Supreme Pizza Chicken!! 🤩

We are devote pizza lovers so this low carb life makes us sad sometimes - at least when it's not cheat day 🍕🍕

However, dishes like these definitely give us the best of both worlds. ALSO, my daughter devoured this 💯

✍Ingredients
4 chicken breast cutlets*
1 6oz can tomato paste
1 teaspoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
1/2 teaspoon oregano
1/2 teaspoon parsley
1 cup shredded mozzarella cheese
1/2 large green bell pepper, sliced
1/4 cup sliced onion
1/4 cup sliced black olives
16 slices pepperoni .

🔪Instructions
Preheat the oven to 400º F.

To make the sauce, in a small bowl add tomato paste, olive oil, salt, pepper, garlic powder, oregano, and parsley. Stir to combine.

Place chicken breasts in a single layer inside a 9x13 cooking dish. Divide sauce between the 4 pieces of chicken and spread sauce to cover each chicken breast.

Sprinkle 1/4 cup of cheese on top of each chicken breast. Evenly distribute the remaining toppings over the chicken.

Bake in the oven 30 minutes or until chicken is fully cooked. Let rest 3-5 minutes and then serve!

    Carrot Cake Breakfast Muffins 🥕

Chloe was quick to help me make these this morning eeeeven though she's always had a thing against carrots 😵 but I guess cinnamon, nutmeg and sugar (or monk fruit) really help disguise their true taste.. .
✍Ingredients
2 cups fine ground almond flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
3 eggs, room temperature
1/4 cup coconut oil, melted and cooled
1/4 cup sweetener of choice
1 cup finely shredded carrots

Instructions

Preheat oven to 350°F (180°C). Line a cupcake pan with 10 paper liners; set aside.

In a large mixing bowl, whisk almond flour, salt, baking soda, cinnamon, and nutmeg. Add eggs, oil, and honey. Stir in the shredded carrots. If desired, stir in optional ingredients.

Pour batter (about 1/4 cup) into your 10 paper liners . Bake for 20-22 minutes or until the center is set. Remove from the oven and cool completely before serving. Store in an airtight container in the refrigerator or the freezer.

    Broccoli Beef with Cauliflower Rice 🥦

This is a weekly favorite for us. I love how simple it is but it always turns out flavorful and delicious. 😋 .
✍ Ingredients
1lb Flat iron steak
1/2lb broccoli
1/4 cup coconut oil
1 tsp sesame oil
1 tsp fish sauce

Marinade
1/4 cup soy sauce OR coconut aminos
1 tsp ginger
2 cloves garlic

Cauliflower Rice 
1 bag frozen cauliflower rice

1. Cut the steak into bite sized peices (DO NOT skip this step. Cutting them up allows the marinade to soak in well) 
2. Add sliced beef to marinade and marinate for at least an hour. (Save marinade for later) 
3. Blanch the broccoli for two minutes and drain
4. Heat oil over medium heat and stir-fry beef until browned, 1-3 minutes. Remove from pan.
5. Stir fry broccoli until crisp and tender, about 3 minutes, then add remaining marinade and cook two more minutes. 
6. Return beef to pan with broccoli and heat throughout, add the fish sauce and sesame oil
7. Heat cauliflower rice according to directions and serve in a bowl topped with broccoli beef
8. Enjoy!!

Sağlıklı yağlar içerdiğinden bedenimizi yine çok büyük bir iyilik yapmış oluyor, tok kalıyor ve karbonhidrat az tüketmiş oluyoruz 😎 Kilo verirken bir yandan ekmek ihtiyacınızı gidermiş olursunuz, bir yandanda vicdan azabı çekmemiş, tok kalmış ve sağlıklı yağlar vitaminler ve mineraller depolamış oluruz 😉

Low carb ekmek 
50g keçi yoğurdu (diyer yoğurtlarda olur) 
10g çiya 
10g ketentohumu 
10g çörek otu 
3 yumurta (yumurtalar büyükse 2 de olur, benimkiler yaklaşık 150g geldi toplam) 
20g zeytinyağı 
200g madem (öğütülmüş)

    Making diabetic friendly snacks today. Jerky made with out, artificial flavors, binders, and any sugar.This batch is being made as a gift for my father-in-law, I personally prefer whole meat slices jerky, but this ground style was requested. Practicing traditional(ish) meat preservation. It's simple to do and a good use for very lean meat or mince. The meat was cured over night and seasoned simply with salt, pepper, mustard seed, coriander, and garlic. I press the meat with a tortilla press, cut into strips, and arrange in the dehydrator.  The tortilla press isn't necessary ( #lowcarbkitchen ), but we occasionally use it to make a special burger by @altonbrown who by the way also has a hack on making jerky without a dehydrator using a box fan and air filters.

    My kitchen re-do is almost done. We just have a few small details to finish - pulls, install knife bar and towel bar and touch up the paint. The lower cabinets are knotty ash finished in “peppercorn” while the upper cabinets and tiny pantry are white. Now, if I only had the photography skills of a lifestyle blogger.     Carne Asada Taco on a low carb tortilla and cheese shell. I still had leftover carne asada, so lunch was super quick to prepare. I started with 1/4 cup of cheese in a non stick pan, once the cheese started to bubble and brown up, I put a low carb tortilla on it, and then flip to warm up the other side of the tortilla. I used Kroger brand tortilla with 6 grams of net carbs. If you are clean Keto, obviously you can make this just on the cheese shell and not use the low carb tortilla👍🏼

Ok so this is officially my favourite recipe I have EVER created. I adapted my Keto fudge brownie recipe to make them dairy-free! These are dense, full of flavour, rich & DELICIOUS🤤

    A huge part of switching over to a keto life style has been cooking from home. Before starting keto my husband and I would get takeout food several times a week, but in the last 11 months it's been few and far between. 99% of our meals (with the exception of our bi-weekly Wing Stop splurge) are made in our kitchen. Since we spend so much time in there, we decided to give our old kitchen cabinets a facelift and put in new lighting. We had a professional come in and do the cabinet refacing and my husband installed new lights this weekend. It's a much more bright and cheery space to be in now. Can't wait to cook our giant Christmas dinner in there for our families next week.
