On busy days 😅💥, this is a go to of mine that everybody loves! 🙌🏻🙌🏻🌈 #glutenfree chicken & bean quesadillas with all the fixings! I also did some #vegan ones filled with @amyskitchen refried beans and @miyokoscreamery cheddar cheese which would make this a #meatlessmonday . All the deets below on how to make these.👇👇 I also share my easy Guacamole #recipe 🥑🥑 on my #instastory 🥰🥰. These got served with all the fixings: hot sauce @cholulahotsauce , fresh cilantro 🌿, fresh limes, salted cucumbers 🥒 and #local hakurei turnips and salsa.
This is a #30minutemeal and is super versatile as you can load your quesadilla with whatever you want. 🤩 Veggies, beans, meat, keep them #vegan, whatever you love! 🥰
Simply take a corn tortilla @foodforlifebaking sprouted corn tortillas, use a spatula and spread refried beans, then add meat and/or cheese. Place the other tortilla on top making a sandwich. Take a large skillet and add a 2 tbs of olive oil, then place your stovetop to medium/high heat. Add quesadilla to the skillet and pan fry for 5 minutes on each side till golden brown. Serve with all your favorite fixings and enjoy! My kiddos 👫👫 absolutely love this! Happy #monday from @chef_emery 👩🏻‍🍳👩🏻‍🍳⚡️⚡️oxoxox

Chang-long(Kuki) | Laphu (Meitei) | Tender Banana Stalk

It's hard to explain what it taste like because it usually absorbs the dominant flavour of what it is being cooked with. That's not to say that it is entirely flavourless. It's mildly sweet and crunchy. And if you get a bad quality stalk, it can be really fibrous. Back at home in #manipur , we make eromba with it where it's mashed with dried whole peas, ngari(fermented fish) and maybe some potatoes and garnished with faakpai/phahphai(hot mint). And in Kuki feasts, it's wildly popular to find the stalk cooked with pork, on account of banana plants abundantly growing in the hills.
Fun fact: Back in the days, banana stems played a vital role in making a seasoning or an alternative for salt. The banana stem would be burnt to ashes(dracarys!), then water would be filtered through the ashes to get what the kukis call 'chang-al' or just sodium bicarbonate. I believe they have the same version in #Assam called khar.
