    I figured out an easy way to make “yogurt”. I use quotes because this doesn’t have any probiotics in it. 1 can full fat canned coconut milk
1.5-2 teaspoons gelatin

I simply heated the coconut milk on medium heat and whisked in the gelatin until it dissolved, then chilled it until it thickened. That’s it! You could add vanilla extract and sweetener if you like. So easy!

    Its #transformationtuesday and as much as we love looking at how far people have come it becomes so easy to compare our journey to someone elses and to just look at the physical. .

This week I challenged everyone to post their transformation photos but to write about their transformation without the scale aspect attached. I think it's so important as a community of keto, lifestyle change, and weight loss journeys, to not post the photos for the likes or the validation, but to encourage, inspire, motivate, and love our own selves first. To truly look at every single change that had to happen to get yourself to this point, and be proud of yourself every step of the way. .

This photo on the left was June 2011, the photo on the right June 2013. There is a 100lb difference between these 2 photos but let me just say, neither of these girls were happy. 
The girl on the right suffered with abandonment issues. Her mom left when she was young and was raised without emotional love. Her love was food. It brought her comfort and happiness, it was her best friend, it never left, it was the one constant she had. She was depressed, she was incorrectly diagnosed with diabetes (which is now a proper PCOS diagnosis), she hated life on the inside.
The girl on the right started a weight watchers journey that would take her losing 60lbs properly. When she stalled, she became addicted to the loss, which took her into NOT eating as a way of losing an additional 40lbs. At 100lbs lighter, not eating on most days, and living life recklessly, she was in fact no happier on the inside. She hadn't taken the time to change her mentality in a healthy way. She still didnt know her worth, and disrespected herself by looking for attention in the wrong places. .

Fast forward to today. I am 75lbs lighter than the left and 25lbs heavier than the right. But what has really changed is my self worth, my self respect, and knowing I deserve not just the best in life, but to treat myself the best as well. My worth is not subject to a number on a scale. .
.
Paired with keto and every single benefit it has brought to my life, I couldnt ask for a better lifestyle. I can honestly say I am happy ♡

    Una receta que no pasa de moda en keto y en dietas bajas en carbohidratos es definitivamente el cheesecake 😋 En mi caso lo prefiero sin la base de harina de almendra o coco y me enfoco más en los sabores que lleva en el topping... en esta foto frutos rojos cubiertos de chocolate oscuro sin azúcar 🤗 Tomen nota y guarden esta receta porque les va a encantar!! 👉👉Ingredientes para el cheescake: 32 onzs de queso crema, 1 taza de endulzante granular de su preferencia,  3 huevos, 1 cucharada de jugo de limón, 1 cucharada de vainilla.
👉👉Instrucciones: mezclar bien todos los ingredientes con la batidora de mano. Engrasar un molde y rociar una fina capa de harina de coco oara que sea fácil de desmoldar. Colocar la mezcla en el molde y hornear a 200°C por aprox 45 minutos (o hasta que se vea levemente dorado). 👉👉Ingredientes para el topping: jalea de frutos rojos sin azúcar al gusto, 1 cucharada de aceite de coco, 1 barrita de chocolate oscuro sin azúcar, endulzante granular al gusto (opcional).
👉👉Instrucciones para el topping: poner a derretir en baño maría el aceite de coco junto con la barra de chocolate y el endulzante granular, debe quedar una consistencia líquida. Una vez desmoldado el cheesecake, untar de jalea toda la parte de arriba, es una capa delgada, que cubra de forma pareja el cheesecake. Sobre la capa de jalea, colocar el chocolate derretido y refrigerar.     This was dinner last night 😍🤗 I’ve got a million things swirling in my head lately...choices for next school year, schedules, childcare for my younger two, my work routine, making time for all the things I want and NEED to do to keep my head above water...ever just feel really overwhelmed with the amount of choices we have to make as moms? It can be SO daunting 😅😅😅 Anyway, quick and easy meals have been my jam lately. This is some Tyson blackened chicken from Costco, deviled eggs, and that cilantro lime crema (from Costco) mixed with sour cream 😍😍😍 Nothin’ fancy but it did the job! I actually did get some meal prep done yesterday...I made ham/cream cheese roll ups, deviled eggs, cheesecake fat bombs and chopped some veggies 😇😇😇😇 working on making easy to grab things in the beginning of the week so I don’t just starve myself all day because I’m too lazy 😂😂😂🤷🏼‍♀️ I tell ya, people think chubby girls just eat all day long 💀 Not in my case! I usually have to be reminded it’s meal time 🤪🤷🏼‍♀️😅 This is probably why I love #intermittentfasting cause it’s like the lazy girl way of losing weight/tapping into fat stores and pretending it’s like, super intentional 😆😎🙃 Alright...off to think of something for TONIGHT’S dinner 😅😅😅 #keto #lowcarb #lchf #ketofood

    I felt bloated from the weekend. I had a few #keto alcohol drinks. Drinking always stalls my body so I opted to do a short #eggfast starting this morning. It always amazes how full you feel when you actually get more fat in.  For transparency, scale was up to 263.4.

🍞 Keto bread recipes are hit-or-miss. Most of them have problems: Too eggy-tasting, too sticky, or too high calories...

💡 We believe we've found the solution! This pumpkin bread is fluffy and aromatic. By using egg whites, we eliminate the "eggy" taste. They also have relatively low calories, compared to most other keto breads.

💪 As a bonus, each slice comes with 5 grams of protein! This is a GREAT snack to have after your workout!

😋 Feel free to add in your favorite nuts to make it even more aromatic! Pop them in your toaster and spread on some peanut butter. 🤤

Ingredients (1 loaf, around 10 slices)
1½ cups almond flour
3 egg whites
¼ cup granulated sweetener (stevia)
½ cup coconut milk
¼ cup psyllium husk powder
1½ tsp. pumpkin pie spice
2 tsp. baking powder
½ tsp. salt
OPTIONAL: Your favorite nuts, crushed (we used shelled pistachios!)

Directions
1. In a bowl, sift all the dry ingredients. Place a container with 1 cup of water into a preheated oven (350°F).
2. Add the pumpkin and coconut milk to the dry ingredients, and mix.
3. Whisk the egg whites, and add them into the dough, folding carefully.
4. Mix in your crushed nuts now if you so desire.
5. Place the dough into a greased loaf pan, and cook the bread in the oven for 75 minutes, or until a skewer comes out of the middle clean.
TOP TIP: Store them in an airtight container, in the fridge for up to 7 days, or up to 1 month in the freezer.

2 tablespoons confectioners-style erythritol (or sweetener of choice to taste)
Mix well and enjoy!

    Easy keto dinner at @outback tonight. Alice Springs Chicken (without honey mustard) and a side of broccoli.
    When I cook this meal at home, I make my own keto honey mustard:
    1/2 cup mayo
    2 tablespoons yellow mustard

    Easy peasy lunch today! Popped some Tyson blackened chicken tenders in the oven and made the the most simple spinach salad! Salad is just spinach, italian dressing, banana peppers, parmesan cheese, and red pepper flakes.
