With Thanksgiving coming up fast, this recipe is even more perfect!
This is my utterly delicious 5 MIN MICROWAVE CINNAMON POKE CAKE. From the time you prep the ingredients, to the time the cake base is ready to receive the pudding drizzle – 15 minutes tops!
And I PROMISE YOU. This will rival any other non-keto oven-baked cake.

Enough to serve 4-5 pax.
HEAVY WHIPPING CREAM 1 cup
GROUND CINNAMON 1 tsp
ERYTHRITOL 1 tsp
GELATINE POWDER 1/2 tsp
1. Put everything into a saucepan. Bring to boil, lower flame & whisk for 1 min. Off fire. Set aside. If pudding it too thick when you are ready to use, dilute with a little bit more cream.
BUTTER 84g/6 Tbsp/3oz melted
ERYTHRITOL 4.5 TBSP
VANILLA 1 tsp
ALMOND FLOUR 6 Tbsp
COCONUT FLOUR 6 Tbsp
BAKING POWDER 1.5 tsp
EGGS 3 large
1. Sift all dry ingredients together, set aside.
2. Melt butter, pour into 7 inch microwaveable glass bowl. Add vanilla. Add dry ingredients next. Mix well with fork.
3. Drizzle in beaten egg. Mix well.
4. Microwave on HIGH for 5 min. Remove cake.
5. Use back end of a small wooden spoon to poke holes 3/4 ways deep into cake. Pour pudding over. Leave to cool completely.
6. Finish with whipped cream & dust with cinnamon. Serve immediately or chill.
