    A bitta Monday night pizza dreaminnn🍕💭 I got a bit creative and strayed from your traditional pizza to create some deeelicious crispy quinoa pizza bases, and then piled them with beet and garlic hummus and lotsa green goodness! 🍕🌱😍 Something a bit different but  these made for a fun and YUM pizza snacking-tasting session! And also a delish healthy lunch or dinner option... making these again soon I reckon! 🙌🏼⚡🥗

quinoa pizza bases👉🏼
✨1/2 cup quinoa (soaked overnight or ~8 hours... Important!💥)
✨3/4 cup rolled oats
✨1/4 cup water
✨1 tbsp extra virgin olive oil
✨1/2 tsp salt
✨1/2 tsp baking powder
✨1/2 tsp oregano
✨1.5 tbsp garlic

Preheat oven to 180°C and line a baking tray.
Blend your oats into a flour. Drain the soaked quinoa and add to a high powered food processor/blender along with all other ingredients until properly mixed. This will take a while and you will probably need to scrape down the sides a few times... be patient!  Once you have a sticky dough, remove from the blender and form into pizza crusts. (If too sticky add a little more oat flour and mix again.) I made 3 small pizzas but you could make 1 or 2 larger... baking times may need to be adjusted though! Bake for 10 minutes, flip and bake for another 10 or until golden. Remove from oven, top with all da toppings and place back in the oven for 10-15 minutes, being careful not to let the bases burn. (They should be crispy but not burnt!) leave to cool for a few minutes, garnish, slice, and enjoy! I topped 2 of mine with beet hummus and 1 with garlic hummus and then piled on the greens, sautéed lemon and garlic zucchini ribbons and spinach, broccoli sprouts, mushrooms, homegrown cherry tomatoes and @angelfoodnz vegan mozzarella! And garnished with some sesame seeds, black pepper and oregano 😋🌱🍕

    Has anyone tried @sirenatuna Smoke Infused Tuna? It has literally become my favourite (or a close equal to chilli 😆) since trying all the Sirena flavours recently. So yum! 👌🏽 I’ve paired it with a simple fresh salad with @meredithdairy goats cheese, kraut (bought, as I’m waiting for my own first batch made using a kraut kit from @thefermentary to ferment) & @myhemple hemp seeds. Drizzled with @cobramestate EVOO & apple cider vinegar.

    Choc Chip Muffins with a Choc Orange Icing.....perfect slightly warm!

For the Muffins:

360g unbleached organic cake flour
180g stevia/raw sugar blend (50:50)
1 teaspoon salt
2 teaspoons baking powder
1 teaspoon bicarb soda
375ml macadamia milk with 1 tablespoon white vinegar (prepare at start)
1 flax egg (prepare first and allow to stand for 15 minutes)
1 teaspoon vanilla extract
90g melted vegan butter
1 cup dark chocolate buds/chips plus more to scatter on top prior to baking
A little more raw sugar to sprinkle on top before baking
Preheat the oven to 190•C. Make your flax egg and your milk mixture first and leave to stand for 15 minutes. Then in the bowl of an electric mixer with a paddle attachment, place the flour, baking soda, baking powder, salt and sugar. Mix on slow. Mix the vanilla extract through the milk/vinegar mixture. Gradually pour the milk mixture in the dry ingredients and mix on medium for a few minutes. Mix in the flax egg for a minute. Add the melted butter and mix until you have a smooth batter. With a spatula, fold through the chocolate buds. Evenly distribute the mixture into 12 muffin cases, sprinkle with the remaining chocolate buds and a little raw sugar and bake for 25 minutes. As soon as your muffins are placed in the oven turn it down to 170•C. Cool in the pan for 5 minutes, then remove to cool on a rack. Pipe some orange chocolate icing on top and enjoy!

3/4 cup powdered sugar
5 to 6 tablespoons orange juice
100g melted dark chocolate
1/4 to 1/2 cup boiled hot water

Melt the chocolate in the microwave in 30 second-intervals. Stir in between. Do not over heat. Stir until smooth. In another bowl, sift the powdered sugar, stir in the orange juice, add the melted chocolate and stir until combined. Add hot water gradually until you have a wonderfully smooth glaze. #chocolateorange #chocolate #muffins #veganmuffins #chocolatechip #vegantreats

    The easiest and tastiest dish to put together. Just make some fluffy mash potatoes, roast a tray of your favourite vegetables (with some garlic and herbs/seasoning) and bring it all together with this 12 minute lentil and onion gravy. I often make things from scratch but I also love a short cut especially for mid-week meals and this gravy which is protein-rich definitely cuts corners but still delivers on flavour. Here’s the recipe for the lentil and onion gravy:

2 brown onions thinly sliced
Fresh thyme (leaves from 10 sprigs)
3 garlic cloves finely chopped
2 cans drained and rinsed organic lentils
2 tablespoons sake (or verjuice or wine)
400ml gravy (I used Essential Onion Gravy by @essentialtrading (it’s delicious 😋)
2 tablespoons ketchup or tomato sauce or a little tomato paste
I tablespoon balsamic vinegar or vegan Worcestershire sauce
Pepper and salt to taste

In a medium-sized deep saucepan, sauté the onion, garlic and thyme over medium to low heat until the onions are translucent but not caramelised. Add the lentils, then add the ketchup / tomato sauce / a little tomato paste. Stir. Add the sake and stir for another 2 minutes. Add some black pepper. Stir. Add the pre-made gravy, the balsamic/Worcestershire sauce. Bring to a gentle boil and simmer for 5 minutes until the gravy thickens. Check the seasoning and adjust to taste. #lentils #gravy #vegangravy #veganlife #vegangains #vegansofig

    This was one of the many delightful displays at the Qld Herb Society “Herb Awareness” Showcase day yesterday. What a fantastic day it was! Thanks to those who popped by the stall space my friends and I shared there! We enjoyed meeting so many lovely people! And a huge thanks to beautiful Deb @daitcheson  and all the other amazing organisers from the Herb Society for creating such a fabulous event! 💚

    keeping the bevie thing going strong here in tassie with my daily protein plant party green smoothie from @kombihobart - super greens, turmeric, pear, pea protein, banana and coconut water 🍌 🍐🥥 🧡🌱. on note though... i feel so FULL 🌟🌟🌟
(no pun intended - seriously though, im always hungry).
FULL of love; gratitude; positivity; happiness. im so blessed to be surrounded by the most amazing people, who support me, motivate me, and inspire me - and most importantly push me; push me to be better in all facets of my life ❤️. as i leave my family here in tas, i am always reminded to not take life so seriously... seriously!

So glad to see these ones turned out! Definitely need to work on making these look impressive and nice looking but they made up for it in taste. Especially with all those toppings (also the chocolate pieces kind of look like ears! ) 😍🙌🏻

    sundays are for MEAL PREP🥦🥣 meal prepping healthy meals for the week ahead really helps me to stay on track with my health goals because we all know that feeling of getting home late after work STARVING and not wanting to spend time slaving over a stove and, in turn, reaching for not so healthy meal choices which may not make you feel your best!

Another thing i used to struggle with a lot was getting all my prepped food to work without bringing a million bags or having things fall over and spill (crazy bag lady over here!) but a couple of weeks ago I discovered the best bloody invention ever🙌🏼this @mealami bag has honestly made bringing prepped meals to work more convenient than i ever thought possible - it’s massive and fully lined thank goodness because as you guys know i drink a lot of smoothies and juices so even if they were to spill I’m not going to be spending hours trying to get beetroot juice stains out of this bag 😂 it’s also the best picnic bag ever with room for a blanket at the top so come summer time it will be on high rotation

    as the weather cools down this is a winters dream breakfast✨creamy oats with lashings of honey, fresh fruits and raisins 🤤

OATS are a fantastic source of fiber and are a slow digesting carbohydrate to keep you feeling fuller for longer to give you that feeling of ‘steady energy’ which makes these babies the peeeerfect brekky food to see you through till lunch time 🙌🏼 i also sometimes like to stir through hemp and chia seeds for added omega 3’s which are extremely important when following a plant based diet! And in most my oat bowls i stir through @superfeast tremella because it adds the most INSANE malty caramelly flavour (it literally tastes like cereal milk) and is amazing for your skin and cellular hydration, digestion and is high in antioxidants ⚡️ I topped this bowl with raisins and cacao nibs from @nutsaboutlifeaustralia (this is currently where im getting all my nuts, seeds and ‘bowl toppings’ from), fresh banana, apple and of course @beepoweraustralia raw honey because its the most amazing flavoured unheated honey and what is a bowl of dreamy oats without lashings of honey?! 🍯 i often make this the night before so its ready to go in the morning so that leaves one less thing to do when i wake up 😂 and you can eat it cold or warm it up for a couple of minutes on those extra chilly mornings... melbournians they are coming 😭❄️ .

This is the definition of a BALANCED brekky (or lunch!) and will keep your tummy verrrry happy🥰
