    Sopa de ervilhas e hortelã
Ingredientes
2 colheres de sopa de azeite de oliva
1 dente de alho amassado
500g de ervilha congelada
200g de ervilha partida
1 colher de sopa de hortelã fresca picada
500ml de caldo de legumes fresco
Sal e pimenta-do-reino a gosto
Folhas de hortelã fresca para decorar
Modo de Preparo
1. Refogue o alho no azeite até ficar levemente dourado. 
2. Adicione as ervilhas secas, refogue e acrescente as ervilhas congeladas. 
3. Junte o caldo de legumes e deixe ferver rapidamente. Espere amornar e bata no liquidificador, até ficar homogênea. 
4. Adicione hortelã picada e tempere com sal e pimenta a gosto. Adicione mais caldo, se necessário. 
5. Decore com folhas de hortelã e regue com um fio de azeite de oliva.

    Vegan Chocolate Cupcakes by @missis_basil 💗

Makes 8 cupcakes

Ingredients

Chocolate Cake:
320 ml plant-based milk (I used almond milk)
0.5 tbsp apple cider vinegar
40 ml melted coconut oil
80 g chocolate chopped (I used dairy-free 78% dark chocolate)
1 tsp vanilla extract
120 g spelt flour
25 g cocoa powder
70 g organic cane sugar
(you can use less or more to taste)
0.5 tsp baking soda
1 tsp baking powder
1/2 tsp salt ⠀

Chocolate cream:
120 g non-dairy whipping cream (I use coconut cream)
70 g vegan chocolate, chopped
⠀
Toppings (optional):
Raspberries
Will be also delicious with cranberries or strawberries
Instructions
Chocolate Cake:
-Preheat the oven to 350°F
-Stir the apple cider vinegar into the plant-based milk and set aside
-Melt coconut oil and 80 g of chopped chocolate in a microwave. Stir in the vanilla extract
-Sieve the flour, cocoa powder, sugar, baking soda, baking powder, and salt into a bowl and mix together
-Pour the milk and melted chocolate mixture over the flour mixture and stir to combine until no large lumps remain (but do not overmix). Taste and add more sugar if desired
-Pour the mixture into the cupcake pan and bake for 20 minutes. Then let it cool completely ⠀

Chocolate cream (prepare this ahead, so it can cool):
-Bring the plant-based cream to a boil in a pot. Remove from the heat, add chopped chocolate and stir using a whisk until melted and well combined
-Fill the chocolate cream into a cup and chill in the fridge for at least 3 hours
-When it’s completely cold, beat with a hand-held mixer on high speed until whipped and stiff peaks form ⠀

Decorate cupcakes with cream and toppings of your choice. Enjoy #bestofvegan

    switching my poolside smoothie bowl for a poolside grilled cheese 🧀 🌴 I always try to be healthy on vacation because it can be SO easy to fall into a routine of eating not the best foods all week & from my stories you can see I’ve *mostly* been sticking to that. BUT when your body is craving a double decker grilled cheese while you tan, it’s not the end of the world to give in & eat 👏🏼 the 👏🏼 grilled 👏🏼 cheese 👏🏼

    This roasted brussels sprouts and sweet potato salad has been my most popular recipe on Instagram so far. It's very satisfying and I love the tanginess the pomegranate seeds add to it. If you have friends or family over this weekend, you should definitely give it a try and indulge them with this delicious lunch or side 😋

500g brussels sprouts 
1 sweet potato 
150g arugula 
1 avocado 
1/2 pomegranate 
1 spring onion 
30g walnuts 
4 tbsp olive oil 
1 tbsp balsamic vinegar 
1 tsp basil, dried
salt & pepper
Dressing: 
3 tbsp olive oil 
1 tbsp agave nectar
1 tbsp balsamic vinegar 
1 tsp Dijon mustard 
2 tbsp water 
salt & pepper

Cut the sweet potato into chunks and halve the brussels sprouts. Mix with the olive oil, balsamic vinegar, basil, some salt and pepper and bake at 350f/200c for about 30min. Wash the arugula an place in a bowl, top with the roasted vegetables, sliced avocado, chopped spring onion, pomegranate seeds and toasted walnuts. Mix all dressing ingredients  and season to taste. Pour over the salad before serving and enjoy!
