    Ludo and Hedo’s week of memories (continuation). Shortly after we settled down at headquarters on Potgieterstraat we started to organize experimental dessert dinners where we wanted to play with flavours by creating unconventional combinations of ingredients. Every month we where holding a dessert dinner of six-courses at first paired with home made non-alcoholic drinks. We fermented our own kwas, a bread drink, and made interesting tea blends. Our fist dish looked like an egg but wasn’t one. It was a homage to el’Bulli’s recipe showing our interest in molecular cuisine and play with perception. We kept these dining events through the whole winter and spring, they evolved and changed but set parameters and demarcated a playground for our establishment which developed in the setting we are at the moment! .
