    What's for dinner tonight...🍋🍽 Lemon Chickpea Salad with Herbed Grilled Chicken.
Sometimes the easiest meals can be right at your fingertips. I found the perfect combination of  lean protein paired up with this lemon chickpea salad recipe originated from one of my favorite girls, McKel @nutritionstripped. 🙌 
You can feel really good eating this salad! 
Chickpeas have so much nutrition. Loaded with fiber, incredibly high in magnesium and essential minerals. Magnesium is helpful in decreasing migraine headaches and PMS. The best part was, dinner was done in under 30 minutes.🙌 Try this recipe out! 
I'm sure you will be asking for more.😊 Ingredients for Lemon Chickpea Salad;

2 15oz can of organic chickpeas
1/4 olive oil
1 tsp of lemon zest
Juice of 1 lemon
2 medium sized shallots, I used a yellow onion instead
1 garlic clove 
1/4 cup of chopped parsley
1/2 tsp of sea salt
Black pepper

Combine lemon juice, olive oil in a bowl and whisk until combined. Stir in shallots, minced garlic, parsley, and lemon zest. Season to taste with salt and pepper.

    Roasted red pepper hummus dip.

This post comes with a warning ☠️☠️. Please make sure you stand beside a wall or chair because you're going to need something to break your fall after you taste this dip.
I think most people enjoy hummus. But I added roasted red peppers which increased its taste 10 fold. I thought this was extremely tasty. Let's get right to it. 
Ingredients:
1 red pepper
1 can chickpeas. Yields just under 2 cups
1-2 garlic cloves minced
1 tbsp Extra Virgin Olive oil (or replace with water)
3 tbsp tahina paste
2 tbsp fresh lemon juice
¼ tsp salt
¼ tsp onion powder

Preparation:
Start off by roasting some red peppers. You only need one but may as well make more because in the next post I'll give you a roasted red pepper recipe only. 
Place oven rack on the second level from the top and preheat oven to 450°f.
Wash well, cut in half and remove stem and seeds along with the whitish membrane. Place peppers cut side down on a cookie sheet lined with foil and bake for about 20 minutes or until the outer skin darkens in some sections and starts to collapse.
Remove from the oven when ready and let them cool until you can touch them. The skin should peel off easily. 
Empty can of chickpeas into a strainer and wash. Preferably remove outer skin of chickpeas. It'll give you a smoother hummus. The skin starts to come off as you Rinse them regardless. 
In a high speed food processor, place the olive oil, tahina paste, salt, lemon juice and minced garlic clove. Blend well. Use rubber spatula to scrape from the sides and blend until smooth. 
Add in chickpeas and diced roasted red pepper ( I seasoned the pepper with salt, onion powder and garlic powder)and blend until smooth adding 2-3 tbsp water slowly as you blend.  This will help thin it out so it blends easier. After 3-4 minutes it should be smooth and ready to eat. 
You could top it with feta and more Extra Virgin Olive oil if you desire and serve it with veggies, whole wheat pita bread or flaxseed bread. Enjoy!

    Welp...I forgot my love of chickpea sandwiches! All the nom nom plus protein and fiber :) Added some carrots, orange pepper, onion, parsley, garlic, onion and veganise mayo, lettuce....On a gluten free bagel easy dinner kids.

    Garbanzos en salsa de tomate y coco, medio plátano maduro y ensalada súper simple con rábano y apio. Los garbanzos siempre los hago al ojo, porque siento que para este tipo de vainas no se necesitan recetas: un par de tomates en trozos (sin cáscara), pasta de tomate, crema de coco, sal, pimienta, orégano, tomillo y algo picante. Es demasiado fácil y demasiado rico💥

Chickpeas in a tomato coconut sauce, half a sweet plantain and a super simple salad with radishes and celery. I always wing it with these chickpeas, because they are so easy that no actual recipe is needed: couple of diced (peeled tomatoes), tomato paste, coconut cream, salt and pepper, oregano and thyme, and something spicy. Incredibly easy and incredibly delicious💥

    Roasted Chickpeas so easy to make. Versatile and delicious.

1 cup cooked chickpeas
1 T avocado oil
sea salt and pepper

Preheat oven to 400.
Coat the chickpeas in avocado oil and season with salt and pepper
Spread on baking sheet and bake 30-40 minutes until crunchy.
Great on their own or on top of salads and soups.

El fin de semana aproveché entre el caos que tenemos en mi casa, en remodelación. Agarré fuerzas para hacer hummus y aderezo de tahini. Digo agarré fuerzas porque es realmente frustrante pensar en hacer algo así debido a la incomodidad por el uso del espacio y la gente trabajando, y bueno tampoco me estoy quejando pero si resulta incómodo.

Entonces la cosa es que me hice un hummus que quedó buenísimo y ni seguí medidas jaja para la mayoría de lo s ingredientes. Hice un paquete de garbanzos, así que según yo tenía para rato, pero la verdad ya casi no queda.

También hice el aderezo de tahini. Hoy para el almuerzo rellené pan pita, con hummus, lechuga, repollo, aguacate y aderezo de tahini. El aderezo lo lleva al próximo nivel.

¡En fin, delicioso!
Hace rato no lo comía y es algo simple de montar y se come riquísimo aunque uno termina con los dedos todos embarrados de hummus...me imagino ya saben cómo termina la historia 😁😁

    Some people tell me that if they ever went vegan they would be miserable, and feel bad for me for “having” to eat the stuff I eat... This is totally not the case, I’m vegan because I’m choosing to be not because I have to be, and I genuinely enjoy and crave healthy food! Of course I still have some junk food, but I don’t crave it...I crave foods like sweet potatoes, big nourishing smoothies, and huge salads with tons of veggies😊 and I’m 100% not miserable... because I also know that I’m helping the environment, animals, and myself☀️ *****************************************************

    Ah, it has been a minute since I made a Buddha bowl! I almost forgot how delicious they can be and how much fun they are to put together. Today, I’ve gone for one of my all-time favourite recipes, chipotle chickpeas, and I’ve served it alongside wholegrain, wild and red rice, 🥑, grated 🥕🥕 courgettes, cherry tomatoes🍅 and baby leaf salad.
