    It’s Orthodox Palm Sunday! Traditionally people eat fried fish on this day, but I filled my plate with delicious vegan food to celebrate. I had beets with garlic and oil, roasted chickpeas with onions, steamed greens with lemon, romaine and dill salad, bean salad (not traditional) and skordalia (garlic spread).

I'm not very found of the routines in the kitchen. I like to play different ways with the same ingredient.
Chickpeas are one of my favourites legumes, in a stew, stir-fry, in hummus or in a salad! Everything depends on the mood I am 😊
In a salad simply put the chickpeas as a base and add your favourite veggies, fruits and seeds. 
This one has carrot, red pepper, cucumber, avocado, radish sprouts, tomato, goats feta cheese and medjoul dates 😍
The dressing is just himalayan salt, lemon and olive oil.

1. Rinse and drain chickpeas. I love @wholefoods no salt added, organic canned chickpeas 
2. Pat completely dry, moisture will prevent them from getting crunchy while roasting
3. In a bowl, cover chickpeas with 1 tbsp of @they vemarket avocado oil. I
4. Sprinkle turmeric, chili powder, garlic powder, paprika, salt, pepper on chickpeas. If you like them spicy🌶 you can add a dash of cayenne pepper
5. Mix oil and spices all over chickpeas 
6. Line baking sheet with chickpeas. Make sure the chickpeas are not on top of each other. 
7. Roast at 400F for ~30-40 min, making sure that you shake them ~10 minutes. Enjoy!!

    My favorite Buddha bowl toppings! Roasted sweet potato, steamed broccoli, and roasted chickpeas with some hummus on the side.

I peeled and chopped a sweet potato into cubes and roasted with oil, salt, and pepper in 225C for about 20 min. While it roasted, I cooked a mixture of rice, quinoa, buckwheat, sunflower seeds, and pumpkin seeds. The broccoli is just chopped and steamed until soft and the chickpeas were fried in a pan with oil, garlic, cumin, and chili.

I usually have it with some fresh spinach and a sauce made out of a blend of water and store-bought hummus! Don’t worry too much about everything being ready at the same time, since you can always re-heat if something’s done too fast!

    My favorite Buddha bowl toppings! Roasted sweet potato, steamed broccoli, and roasted chickpeas with some hummus on the side.

    Whoop happy Easter! Chocolate eggs for breakfast, more fruity sourdough, quite a few (coughcough four) beer garden pints in the afternoon, a lovely chickpea and cod stew with homemade bread. Probably also some wine because it’s a bank holiday and IDGAF 😊 total 2,595 #calories for the day with exercise calories at 859 (20,000 steps), making me more or less even.

Chef #TimHontzas still seems to be working his magic with his cornmeal breading and fryers. -I also only saw "Red Snapper" on the specials board, but had somehow missed the "Cornmeal Fried" prefix. ;) And a fried vegetable is still a vegetable! #truth
And it was all good!
I'm still rooting for Chef Hontzas to make it past the nominations round of the @beardfoundation Awards one of these years. He has been nominated three(!!!) years in a row, and his Papou's philosophy is definitely evident in the dishes that come out of his kitchen: "We prepare food for the body, but Good Food to feed the Soul."

It was one of those 'by sheer chance' winners that comes about from using up odds and ends from cupboards and fridge.

Originally created when myself and fellow chef @chappilass were doing some recipe developing way back in the early days of Holistic Kitchen, it was such a surprising success that it made its way onto the pages of the ebook and the tables of many a retreat since.

Los garbanzos son mi legumbre favorita en el mundo (y cuando chica los odiaba 😪), es que se pueden preparar de tantas formas y siempre queda rico y diferente, como si fuera otro ingrediente. Así que aquí les dejo la receta de esta maravilla crujiente por fuera, y cremosa por dentro 🤩.

Ingredientes:
-1 1/2 taza de garbanzos crudos remojados toda la noche, al menos 8 horas.
-1/2 cebolla grande.
-1 diente de ajo.
-1 puñado grande de cilantro.
-3/4 taza de harina de garbanzo y/o avena.
-1 cucharada de comino (hay que ir probando, a mi me gusta con mucho sabor a comino).
-Sal a gusto.
-1/4 taza de almidón de maíz o de tapioca.

—Procesar los garbanzos, hasta que queden cremosos y agregar todos los ingredientes menos el almidón, y refrigerar por unos 15 minutos.
—Con las manos ir haciendo bolitas medianas y pasarlas por el almidón.
—Freír las bolitas en abundante aceite y comer los falafel calientitos.

Sweet Potato Ingredients:⠀
3 sweet potatoes⠀
1 15-oz can chickpeas⠀
tandoori masala seasoning (enough to rub chickpeas) or make your own mix (recipe below)⠀

3 avocados⠀
juice of 1 lime⠀
2 garlic cloves, finely grated⠀
salt to taste⠀

Tandoori Masala Simple Spice Mix:⠀
1 teaspoon ground ginger⠀
1 teaspoon ground cumin⠀
1 teaspoon ground coriander⠀
1 teaspoon paprika⠀
1 teaspoon turmeric⠀
1 teaspoon salt⠀
1 teaspoon cayenne pepper⠀
⠀
SWEET POTATO:⠀
Drain and rinse 1-15oz can chickpeas. (Optional: Toss chickpeas in a little olive oil before adding the spices.)⠀

Rub chickpeas with generous amount of tandoori masala seasoning (pre-bought or make your own simple mix above). Add salt to taste.⠀

Roast chickpeas and sweet potato at 400F until crispy (about 20 minutes).⠀

Use fork to remove a little of the center of 3 baked sweet potatoes (sliced open) and load with chickpeas.⠀

GUACAMOLE:⠀
Mix together 3 very ripe avocados (mashed), juice 1 lime, 2 finely grated garlic cloves, salt to taste. Add dollop of guacamole to top of chickpeas and add a drizzle of tahini and red chili flakes⠀

    One of my favorite dishes! Mediterranean hummus fresh and delicious 😋 .
Here is my recipe: leave the chickpeas over night in the cold water (best 24 h.) then cook it with onion garlic bay leaf and even carrots 🥕 pressure cook for 45 min or until tender, if you don’t have pressure cook then it will take you around 2 hours, extract the onions and garlic, then mix the chickpeas with one spoon of tahini paste fresh garlic, salt, lemon 🍋 juice, olive oil and even parsley once smooth purée obtained serve with cooked chickpeas olive oil, zaatar, paprika, lemon juice, parsley and whatever your imagination tells you! You can find this recipe in my YouTube channel enjoy!

After cleaning with a potatoes brush I put the sweet potatoes in the microwave for 5 minutes then in the oven at 400F/200C, until I was ready with the Mediterranean crunch salad from the cooking book Mostly plants. If you follow a flexitarian diet I recommend you to get a copy, so many delicious recipes from the Pollan Family.
