    It’s #tacotuesday and what better way to indulge than with Roasted Cauliflower and Chickpeas? It’s super simple and we rarely ever have any leftovers. .

    🌱1 head of cauliflower broken into florets
    🌱1-2 cans of chickpeas, rinsed & dried 🌱extra virgin olive oil 🌱BBQ rub: equal parts of cumin, smoked paprika, garlic powder, onion powder, salt, chili powder, coconut sugar & a pinch of black pepper

    🌱Preheat oven to 400°F. Lightly coat cauliflower and chickpeas in olive oil, and then toss in BBQ seasoning mix. Place on foiled/oiled cookie sheet and bake for 20 minutes. Toss and then bake for 15-20 min until golden. Remove and serve with your favorite tortillas and taco toppings! .

    Lunch today!
    So my family have gone out and I’m under strict instructions to eat enough. Sooo...
    Slide 1: Vegan sweet potatoes with Moroccan chickpeas, tomatoes and hummus dressing. I made it all from scratch (except the hummus) and it was actually really nice. The recipe said 1 large potato and I was so tempted to do 1 small but made the right choice and had 2 small as we had no big potatoes. I made the recipe *almost* exactly and ‘twas very tasty. I feel very guilty now tbh but I know this food will nourish my body for a dog walk and 4 more hours of revision.
    Slide 2: Orange juice with iron water because atm my iron levels have been quite low and it leaves me feeling lot so great! I don’t know why but orange juice is much scarier for me than an orange even though our orange juice has nothing added!
    Slide 3: blueberries in a *shop-bought* rice pudding 😬 I really like the rice pudding and ive eaten it before but not with a meal as well so 😖 but it tasted good.

    Hallo my friends!
    Today I made hearty, simple and extra comforting Greek Chickpea soup!
    A highly nutritious and delicious vegetarian Greek dish, full of fiber and a unique supply of antioxidants. So, if you love chickpeas then this Greek chickpea soup recipe is a definite must try!
    Ingredients:
    500g/ 17 oz. dry chickpeas (revithia)
    1 large red onion, finely chopped
    1/2 a cup olive oil
    1 bay leaf
    2 tbsp dried oregano (optional)
    salt and freshly ground pepper
    juice of 1-2 lemons
    2 tbsp flour
    vegetable stock (optional)
    Directions:
    To prepare this Greek chickpea soup recipe (revithia soupa), start by washing the chickpeas and let them soak in plenty of cold water overnight (ideally for 18 hours).
    When you are ready to make this Greek chickpea soup recipe, drain the chickpeas (revithia) and discard the soaking water. Place the chickpeas in a colander and rinse very well with plenty of water (4-5 times). Put your hands in the colander and rub them well.
    Place the revithia in a large pan with enough cold water to cover them (about 4cm over the chickpeas).
    Turn the heat up and bring to the boil. Keep removing the froth from the top with a wooden spoon for about 15 minutes.
    Drain the chickpeas and then put them back in the pan and add enough warm water to cover them again. Bring to the boil and add the olive oil, chopped onion, oregano and bay leafs.
    Turn the heat down to a simmer and place the lid on. Let the revithia cook for 1-2 hours, depending on the chickpeas, until tender. Add more water if necessary in order not to dry.
    If you prefer your soup to be thicker, during the end of cooking time add in a bowl the flour and lemon juice and pour gradually 1-2 ladles of the soup and whisk. Add the mixture slowly in the pan with the chickpeas and season. Stir gently for 2-3 minutes until the soup thickens.
    Serve this Greek chickpea soup while still warm with lots of olives and crusted bread aside. Enjoy!
