    When it’s cold, all I want is a hot soupy meal. Wandered up and down Brunswick and felt good to step in here. They have Thai Beef Noodle Soup! Served with large chunks of tender brisket, and slices of another part, generous portion of thin rice noodles, and a very tasty and rather intense intense beef broth. Best of all, leafy greens 🥬!.

    As the temperature begins to drop, nothing beats the comforting depths of diving into a bowl of pho, Vietnamese beef noodle soup. 🇻🇳🍜🐄🌱

Silky rice noodles swim amongst tender brisket and slices of raw beef, gently blanched by the deep broth. And it’s always the broth that is king. I tend pile mine high with basil, adding herbaceous freshness to offset the richness.

There’s also the obligatory hoisin, sriracha and saté sauce. I particularly love that this place has a pot of the saté sauce on the table, as apposed to the tiny insignificant dish most other places give you; I can avoid the hassle of asking for two more.

Only an 18-hour simmering period! That's right, by this stage in our brothing process, we've simmered organic bones in filtered water for almost an entire day! 🙏🏻 You might be thinking: that's a lot of waiting around! 😉 When you consider the benefits of a long simmering period, you'll understand why we bother! 👇🏻

When we allow organic bones and marrow to completely break down, we promote the release of all essential nutrients and minerals! 🙌🏻 The longer the bones simmer = the more we absolutely maximise their nutrient potential.. and the easier our broth is on the gut! 👌🏻 We put in the hard yards, so that your body doesn't have to!
