    Some days I can’t bring myself to turn on the oven or stove 🔥and when it’s soooo humid out you can forget about it if it takes more than 5 minutes. 
This Mediterranean infused white bean dish (recipe below 👇🏼) is super fast to prep and the only issue will be stopping yourself from going back for thirds. ——————————————————————
Mediterranean infused white beans with crusty bread

Ingredients:
2, 15 ounce cans white beans (I used cannelllini) drained and rinsed
6  tablespoons olive oil
2  tablespoon red wine vinegar
1 lemon, juiced
2  tablespoons fresh basil, roughly chopped
2 tablespoons fresh parsley, roughly chopped 
2 teaspoons agave or honey
3 garlic cloves, minced
1/2 teaspoon oregano, dried
1/4 teaspoon salt
1/4 teaspoon pepper
1/4  teaspoon crushed red pepper flakes
2 oz. feta cheese crumbled
1/4 cup roasted red pepper, chopped
2 tablespoons sun dried tomatoes, chopped (I used @traderjoes In oil) 
A loaf of your favorite crusty artisan bread

Assembly:
In a large bowl or container, add the beans. Pour the oil, vinegar, lemon juice over top and toss in the herbs, agave/honey, garlic, oregano salt, pepper and red pepper flakes. Gently fold all the ingredients together until evenly coated throughout. Now, to the bean mixture, sprinkle in the feta cheese, red peppers and tomatoes. Fold in again to mix throughout. Cover the bowl or container and refrigerate for at least 30 minutes, longer (a few hours) is better. 
Once bean mixture has all the flavors infused into it start the toasts. 
Cut thick slices of your artisan bread and drizzle with olive oil. Heat a skillet over medium heat and add the bread to the skillet once hot. Toast until each side is golden brown and crunchy. Top the toasted bread with the infused bean mixture and enjoy!

Uno de los platos favoritos del hubby " Arroz con puré de papas y Carne"
But, No rice today honey!🤘🏻😘 Vegetales al vapor y luego salteados con un poquito de pimienta y aceite de oliva. Yummy! 🥕🥦 Puré de papas:🥔🥔 Majar las papas , agregarle sal y levhe. Mezclar hasta que tenga consistencia de puré.

Carne:🥩 Sazona con lo que desees, yo soy simple. Así que solo le agregue sal, un poco de pimienta y listo. Calente el sartén y luego agregue las porciones de carne, lo tape y luego le di la vuelta hasta que este bien cocido.

    Brazilian food is very unfamiliar to me. I had no exposure to it in my childhood. When I was in college, I watched a man on TV travel the world and eat many different things. When he traveled to Brazil, I saw this amazing black bean stew served on rice. I learned that it was called Feijoada and it is the national dish of Brazil. I finally was able to try it @ricenbeansnyc. It was fantastic. I learned a lot more from Anthony Bourdain since that day I saw him eat Feijoada. He was a fantastic person who taught us not to fear people that seem different from us. We should be curious, learn, and embrace those differences that make us all human. I am still sad that he is gone but I will try my best to remember what he has done for me and for the world. So thank you again Tony and I am celebrating you today for everything that you have done. #bourdainday
