    In celebration of last month’s Asia’s 50 Best Bars celebrations, and the upcoming announcement of our sister list (The World’s 50 Best Restaurants 2019) in Singapore, Julien Royer, chef-owner of Odette, is sharing his favourite spots in the Lion City.

Next up, we visit Native (No.4 in Asia’s 50 Best Bars 2019). The second-highest ranked bar in Singapore takes its inspiration from the local and regional landscape, serving cocktails with foraged ingredients from jasmine blossom to turmeric leaves. The brainchild of mix maestro Vijay Mudaliar, voted the Altos Bartenders' Bartender 2018, it's a boundary-pushing approach which results in highly original drinks such as Antz – a mix of Thai rum, aged sugarcane, tapioca and soursop topped with ants on a frozen basil leaf.

    #TeenageDream – It’s a dream of mine to visit #Bangkok, and when I do, #TeensOfThailand is definitely on my list of places to visit.  Don’t lock me up just yet – Teens is a #GinBar, on #Asias50BestBars list, conspicuously located in a renovated 80-year-old shop-house on the edge of the city’s #Chinatown.  #TheDailyServer #bartender, Lily, has been working here for 2 years.  Lily is making one of the bar’s seasonal gin cocktails.  The bar is known for its goblet-sized #GinAndTonics infused with local ingredients found on the streets of Thailand.  Thanks to Lily and @sip_sensei for the guest shot.

    Sometime a simple, balanced and tasty drink is all you need.

The first drink I thought of when I was working on @coahongkong menu for the very first time back in 2017 was a twist on a classic La Paloma. How can we play a riff on this amazing drink so it can represent who we are.
. 
Throughout my travels to Oaxaca, I became obsessed with Sal de gusano (worm salt). Literally you can find worm salt everywhere in and around the markets. Hardly anyone was distributing it in HK so I had to hand carry my own for the first few months of our opening (now luckily there is a supplier). I end up using it on a Paloma to add depth, complexity and contrast to the refreshing cocktail and a little Mezcal to lift the drink.

It is now officially our best selling cocktail since we opened.

Tequila blanco, Mezcal joven, lime, grapefruit soda, worm salt, grapefruit peel

This content is to celebrate in advance the first international Paloma day that is scheduled every year May 22nd ! @mezcal_ambassador
