雖然感覺冇咩特別
但勝在可以自由配搭餡料

Recipe: Cut 1-14oz block of extra firm tofu (pressed and dry) into about 3/4-inch cubes and bake in oven on lined baking sheet 400F until golden and slightly crispy, about 20 minutes. Cook 4oz wide  Lo Mein noodles as per packet directions. Whisk sauce: 1/3 cup low-sodium tamari or soy sauce, 1 tbsp + 1 tsp maple syrup (or to taste), 2 tbsp rice vinegar, 2 tbsp garlic chili sauce, 2 tbsp minced ginger, 1/4 tsp cayenne, 1 tsp sriracha (optional), salt to taste. Once tofu is ready, heat skillet and add sauce. Cook until sauce starts to bubble. Add baked tofu and 4 sliced scallions and keep stirring while heating. Quickly add cooked Lo Mein noodles and stir for another minute or so until heated through. Remove from heat and add cooked veggies of choice.  Fold in 1/4 cup chopped roasted peanuts. Add a few squeezes of fresh lime.

This morning’s bowl is ticking aaaall boxes – I threw together some overnight chia pudding (1 tbsp chia seeds, ½ cup almond milk and a dash of vanilla essence), leftover chia jam, @thecollectiveoz kefir, banana and @tableofplenty nicely nutty muesli in about five minutes and this was the result. A little prep the night before or on the weekend goes such a long way! This breakfast has a good mix of healthy fats, protein, fibre, probiotics and carbs; something I always aim for.

    Banana-Free Nice Cream Full of greens🥬 to kickstart my day! Eating a variety of greens in the morning is something I love to do to fuel my body with essential nutrients and minerals that give me SO much energy.

When making my green smoothies, I pack in as many things as possible to get a whole assortment of vitamins. Celery, kale, spinach, spirulina, berries, pineapple, kiwi, mango, flax, pears, fresh lemon or orange juice, avocado, da da daaaaa.... you name it, I add it. I look for flavor too and so far, this has been my favorite recipe!

Morning Smoothie:
1 big handful of spinach🌱
1 cup coconut milk
1/4 cup frozen pineapple🍍
3/4 cup frozen mango
1tsp green spirulina
1/2 fresh avocado
1 tsp ground flax
1/2 large, peeled cucumber🥒
1 big tbsp of the alkalizing blend from @unicornsuperfoods

Add all ingredients to blender! Use more frozen ingredients and less liquid if you want it to be like nice cream!

    these mochi donuts are giving me spring vibes! love visiting @thirdculturebakery when I’m in east bay. my fave spring flavor is the vietnamese coffee. ☕️ [piña colada • vietnamese coffee • buko pandan •strawberries n’ cream • honey saffron + pistachios • blood orange]
